10-Minute Cream Cheese Pasta Recipe

Ingredients
  

  • 8 oz 225g pasta (spaghetti, penne, or fettuccine work well) – Choose quality pasta for better texture and flavor.
  • 4 oz 115g cream cheese (full-fat preferred) – Full-fat melts smoother and creates a richer sauce.
  • 2 tbsp olive oil – Adds depth and helps create a glossy sauce.
  • 2 garlic cloves minced – Fresh garlic gives a stronger, more aromatic flavor.
  • ½ cup 120ml pasta cooking water – This is key for a silky, emulsified sauce.
  • ¼ cup 25g grated parmesan cheese – Always grate fresh for the best melt and taste.
  • Salt to taste – Enhances all the flavors in the dish.
  • Black pepper to taste – Adds a subtle kick and balance.
  • Optional: fresh parsley or basil – For a pop of freshness and color.

Method
 

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Make sure the water is well-salted for better flavor. Before draining, reserve about half a cup of pasta water.
  2. While the pasta cooks, heat olive oil in a pan over medium heat. Add the minced garlic and sauté gently until fragrant but not browned. This step builds the base flavor for your sauce.
  3. Add the cream cheese to the pan and stir until it begins to soften. Pour in a bit of the reserved pasta water to help it melt smoothly. Keep stirring to avoid lumps and ensure a creamy consistency.
  4. Add the drained pasta directly into the sauce. Toss everything together so the pasta is evenly coated. Add more pasta water as needed to loosen the sauce and make it silky.
  5. Stir in freshly grated parmesan, salt, and black pepper. Mix until everything is well combined and creamy. Taste and adjust seasoning if needed.
  6. Remove from heat and sprinkle with fresh herbs if using. Serve immediately while the sauce is warm and creamy. Enjoy every bite of this quick comfort dish!
