Air Fryer Chicken Nuggets Recipe

I still remember the first time I made chicken nuggets at home instead of grabbing a frozen bag from the freezer aisle. I honestly didn't expect them to turn out so crispy without a drop of deep frying.

Ingredients
  

  • 1 pound boneless skinless chicken breast, cut into bite-sized pieces – fresh chicken gives the juiciest bite, so avoid pre-frozen cuts if you can
  • ½ cup all-purpose flour – this first coating layer helps the egg wash stick better
  • 2 large eggs beaten with a splash of milk – the "glue" that holds the breadcrumbs onto the chicken
  • 1 cup breadcrumbs regular or panko – panko gives an extra crispy, restaurant-style crunch
  • ½ teaspoon garlic powder – adds a subtle savory depth without overpowering the chicken
  • ½ teaspoon paprika – gives the coating a warm color and a mild smoky note
  • ½ teaspoon salt and black pepper to taste – season the flour and breadcrumbs both, not just the chicken
  • Cooking spray or olive oil mister – this is what actually makes the coating crisp up in the air fryer

Method
 

  1. Pat the chicken breast pieces completely dry with paper towels first, since wet chicken won't hold the flour well. Toss the cubes into a zip-top bag with the flour, seal it, and shake until every piece is evenly dusted. This thin flour layer is what helps the egg wash cling properly in the next step.
  2. Whisk the eggs and milk together in one shallow bowl, then mix the breadcrumbs with garlic powder, paprika, salt, and pepper in another. I keep one hand for the wet mixture and one hand for the dry mixture so I don't end up with clumpy fingers. It sounds fussy, but it genuinely saves time.
  3. Dip each floured chicken piece into the egg mixture, letting the excess drip off, then press it firmly into the seasoned breadcrumbs. Press gently so the crumbs really stick to the surface instead of falling off in the basket. Place each finished nugget on a parchment-lined tray as you go.
  4. Spray the air fryer basket lightly with cooking spray, then arrange the nuggets in a single layer without letting them touch. Spray the tops too, then air fry at 400°F for 7 to 9 minutes, flipping halfway through so both sides turn evenly golden. Cook in batches if needed rather than crowding the basket.
  5. Use a meat thermometer to confirm the thickest nugget has reached 165°F internally before pulling them out. Let them rest for a minute or two on the tray so the coating sets and stays crunchy. Serve immediately while they're hot for the best texture.

Notes

  • I always pat my chicken bone-dry before flouring it, otherwise the coating slides right off in the basket.
  • I never skip preheating the air fryer for about 3 minutes, since it helps the nuggets start crisping immediately instead of steaming.
  • I mix a little cornstarch into my breadcrumbs when I want extra crunch, and it genuinely makes a difference.
  • I spray both sides of the nuggets, not just the top, because dry spots turn pale and won't crisp up properly.
  • I cook in batches instead of overcrowding the basket, since packed nuggets steam each other instead of frying.
