I start by pouring a little maple syrup onto one small plate and the cinnamon sugar onto another. I dip the outer edge of each glass into the syrup first, then roll it in the cinnamon sugar. This little touch makes the drink feel special before you've even taken a sip.
Next, I fill each rimmed glass with ice cubes right to the top. Then I pour the apple cider over the ice, letting it settle in and chill for a moment. This is the base flavor of the whole drink, so I always use good-quality cider here.
Now I add the fresh lemon juice and maple syrup directly into the glass. I give it a gentle stir with my bar spoon so everything blends without losing too much fizz later. This step ties the sweetness and tang together perfectly.
Finally, I top the glass with chilled ginger beer and give it one more light stir. I finish each glass with a cinnamon stick, an apple slice, a sprig of rosemary, or a piece of star anise. It looks just as good as it tastes.
