Start by preheating your oven to 375°F (190°C). This ensures an even cooking temperature for the perfect salmon.
Mix 3 tablespoons of honey, 3 cloves of minced garlic, the zest and juice of 2 limes, 1/4 cup of fresh chopped cilantro, and 1 teaspoon of soy sauce (optional) in a small bowl. Stir until everything is well combined. The aroma will already hint at the flavor-packed meal ahead.
Lay out 4 large pieces of aluminum foil. Lightly spray the center of each piece with cooking spray to prevent sticking. Place one 6–8 ounce salmon fillet on each piece of foil. Drizzle each fillet with olive oil (approx. 1/2 tablespoon per fillet) and season lightly with salt and black pepper to taste.
Spoon the honey cilantro lime marinade evenly over the salmon fillets, ensuring each piece is generously coated.
Fold the sides of the foil up and over the salmon, creating sealed packets. Be sure to leave some space inside the packet for heat and air to circulate, which helps the salmon cook perfectly without sticking.
Put the foil packets on a baking sheet and transfer them to the oven. Bake for 15–20 minutes, or until the salmon flakes easily with a fork and reaches a light pink color.
Carefully open the foil packets (watch out for steam!) and transfer the salmon to serving plates. Garnish with extra lime slices and fresh cilantro for a pop of color and flavor. Serve hot, alongside your favorite sides.
