Baked Salmon with Spinach & Mozzarella Bliss Recipe

I recently made this baked salmon with spinach and mozzarella, and honestly, it felt like restaurant-quality food right from my own oven. The combination of tender salmon, creamy cheese, and fresh greens turned out absolutely irresistible. I love how simple ingredients come together to create something so comforting and flavorful
Total Time 30 minutes
Servings: 4

Ingredients

  • 4 salmon fillets – choose fresh firm fillets for better flavor and texture
  • 2 cups fresh spinach – avoid frozen spinach as it releases excess water
  • 1 cup mozzarella cheese grated – grate fresh cheese for better melting
  • 2 cloves garlic minced – adds depth and aroma
  • 2 tablespoons olive oil – enhances richness and prevents sticking
  • 1/2 cup heavy cream – creates a creamy indulgent base
  • 1/4 teaspoon salt – adjust according to taste
  • 1/4 teaspoon black pepper – for subtle heat
  • 1/2 teaspoon dried oregano – adds a mild herbal flavor
  • 1/4 teaspoon red pepper flakes optional – for a gentle kick

Method

  1. Preheat your oven to 375°F (190°C) so it’s ready when you are. Lightly grease a baking dish with olive oil to prevent sticking. Place the salmon fillets in the dish and season them with salt and pepper for a simple base flavor.
  2. Heat olive oil in a skillet over medium heat and sauté the minced garlic until fragrant. Add fresh spinach and cook until it wilts down completely. Stir in the cream, oregano, and red pepper flakes, letting it simmer into a creamy mixture.
  3. Spoon the creamy spinach mixture evenly over each salmon fillet. Make sure each piece is well covered for maximum flavor. Sprinkle freshly grated mozzarella cheese generously on top.
  4. Place the dish in the preheated oven and bake for about 15–20 minutes. The salmon should be cooked through and flaky, while the cheese melts into a golden, bubbly topping.
  5. Remove the dish from the oven and let it rest for a few minutes. This helps the flavors settle and makes serving easier. Serve warm for the best taste and texture.

Notes

  • I always pat the salmon dry before seasoning to help flavors stick better
  • Don’t overcook the salmon; I check it at 15 minutes to keep it juicy
  • I prefer fresh mozzarella because it melts smoother and tastes richer
  • Adding a squeeze of lemon right before serving really brightens the dish
  • I sometimes broil for 2 minutes at the end for a golden cheesy top
