Balsamic Baked Chicken Breast with Mozzarella Cheese

I recently tried my hand at balsamic baked chicken breast with mozzarella cheese, and I’m absolutely hooked! It’s one of those recipes that feels fancy, but it’s surprisingly simple to make.  The balsamic sauce pairs perfectly with the tender chicken, while the melted mozzarella takes comfort food to new heights.

Ingredients
  

  • 4 skinless boneless chicken breasts – Fresh chicken works best for tenderness and flavor; avoid frozen if possible.
  • 2 tablespoons olive oil – Adds moisture and helps the seasonings adhere beautifully.
  • 1/2 teaspoon dried oregano – Brings a Mediterranean flair.
  • 1/2 teaspoon dried basil – Enhances the rustic herbal aroma.
  • 1 teaspoon salt – Essential for drawing out the flavors.
  • A pinch of cracked black pepper – Adjust according to your spice preference.
  • 1 1/2 tablespoons minced garlic about 5-6 cloves – Adds depth and a slight kick.
  • 2 cups grape tomatoes or cherry tomatoes halved – These burst into sweetness as they bake.
  • 1/4 red onion peeled and sliced – Introduces a bit of savory contrast.
  • 1/4 cup balsamic vinegar – The star ingredient that enriches the whole dish.
  • 1 tablespoon packed brown sugar – Balances the tanginess of the balsamic.
  • 3/4 cup mozzarella cheese shredded fresh – Fresh mozzarella melts better and tastes creamier.
  • 2 tablespoons fresh parsley or basil chopped (for garnish) – Adds color and a fresh finishing touch.

Method
 

  1. Set your oven to 430°F (220°C) and grease a baking dish lightly with oil. Presentation starts from here, as the tomatoes and balsamic sauce will form a gorgeous base.
  2. Place the chicken breasts in the prepared baking dish. Drizzle olive oil over them, making sure to coat each side. Sprinkle the oregano, basil, salt, pepper, and half the minced garlic. Rub everything into the chicken for maximum flavor.
  3. Combine balsamic vinegar, the remaining garlic, and brown sugar in a jug or small bowl. Whisk it thoroughly until the sugar dissolves. This balance of sweet and tangy is key to the dish.
  4. Spread the halved grape tomatoes and sliced red onions around the chicken breasts. This adds color, texture, and extra flavor.
  5. Pour the balsamic mixture evenly over the chicken and vegetables. Flip the chicken gently to coat both sides. Bake for 20-25 minutes, depending on the chicken's thickness, until fully cooked.
  6. Once the chicken is cooked through, sprinkle shredded mozzarella over each breast. Place the dish back in the oven under the broiler for 4-5 minutes, or until the cheese is melted and bubbly.
  7. Allow the chicken to rest for 5 minutes before serving. Garnish with freshly chopped parsley or basil for a lovely touch. Enjoy this warm, gooey delight!

  • Use a meat thermometer to ensure the chicken reaches 165°F internally. This guarantees juiciness.
  • Opt for fresh mozzarella instead of pre-shredded. The melt and flavor are worth it!
