BBQ Chicken Foil Packets Recipe

I still remember the first time I made BBQ chicken foil packets on a random Tuesday when I had zero energy to cook but a fridge full of chicken. I tossed everything into foil, popped it in the oven, and forty minutes later I had a full dinner with almost no dishes to wash

Ingredients
  

  • 8 pieces chicken drumsticks and thighs bone-in, skin removed – this combo stays juicy and doesn't dry out inside the foil
  • 3 cups frozen mixed vegetables – no need to thaw they steam perfectly alongside the chicken
  • 1/2 cup BBQ sauce divided – pick your favorite bottled sauce, this is where the flavor comes from
  • 1/2 teaspoon smoked paprika – adds a subtle smoky depth even when baking indoors
  • 1/2 teaspoon garlic powder – gives the chicken savory background flavor without any chopping
  • 1 teaspoon kosher salt – balances the sweetness of the BBQ sauce
  • Fresh parsley chopped, for garnish (optional) – adds a pop of color and freshness right before serving

Method
 

  1. I start by preheating my oven to 425°F so it's fully hot by the time my packets are ready. While that heats up, I season the chicken pieces on both sides with the salt, garlic powder, and smoked paprika right on a sheet pan.
  2. Next, I cut four large pieces of heavy-duty foil, about 18x12 inches each, and lay them flat on my counter. Heavy-duty foil matters here because thinner foil can tear once it's holding hot sauce and juices.
  3. I place 3/4 cup of frozen mixed vegetables right in the center of each foil sheet. There's no need to thaw them first, since they'll cook through completely as the packet steams in the oven.
  4. On top of the vegetables, I place one drumstick and one thigh per packet. This mix of dark meat pieces stays tender and juicy, even after almost an hour of cooking time.
  5. I brush each piece of chicken generously with about a quarter cup of BBQ sauce total, saving the rest for later. This first coat soaks into the chicken as it cooks.
  6. I bring the long sides of the foil up so the edges meet above the food, then fold them down twice. I do the same with the short ends, sealing everything tightly so no steam can escape.
  7. I place all four sealed packets onto a clean baking sheet and slide them into the oven for 50 to 55 minutes, until the chicken reaches an internal temperature of 165°F.
  8. Carefully, I open each packet, brush the chicken with the remaining BBQ sauce, and let it bake uncovered for another 5 minutes. A sprinkle of fresh parsley on top finishes it off beautifully.

Notes

  • I always use heavy-duty foil, since regular foil has torn on me before and let all the juices leak out.
  • I like brushing on a little extra BBQ sauce at the very end for a stickier, more flavorful finish.
  • I leave a little room inside the packet when folding it, since tightly cramped packets don't let heat circulate properly.
  • I always check the chicken with a meat thermometer instead of guessing by time alone.
  • I swap in fresh vegetables like bell peppers or zucchini when I have them on hand instead of frozen ones.
