Blackberry Coconut Mojito Recipe

I recently tried this Blackberry Coconut Mojito, and honestly, it felt like a mini vacation in a glass. The combination of juicy blackberries and creamy coconut surprised me in the best way. I love how refreshing yet slightly indulgent it tastes, especially on a warm day. When I first made it, I wasn’t sure how the flavors would blend, but they balanced perfectly.

Ingredients
  

  • 1/2 cup fresh blackberries – Fresh berries give the best flavor and natural sweetness. Avoid frozen if possible as they can water down the drink.
  • 8 –10 fresh mint leaves – Mint adds that classic mojito freshness; gently bruise them to release aroma.
  • 2 tablespoons fresh lime juice – Freshly squeezed lime juice is key for a bright tangy flavor.
  • 2 teaspoons sugar or simple syrup – Adjust sweetness to taste; simple syrup blends more easily.
  • 1/4 cup coconut milk – Use full-fat coconut milk for a creamy texture and richer taste.
  • 1/2 cup white rum – A light rum works best to keep the flavors clean and balanced.
  • Club soda or sparkling water – Adds fizz and lightness to the drink.
  • Ice cubes – Keeps everything chilled and refreshing.
  • Extra blackberries and mint sprigs for garnish – Makes the drink visually appealing and aromatic.

Method
 

  1. Start by rinsing the blackberries and mint leaves thoroughly. Slice the lime and squeeze out fresh juice for the best flavor. Measure all ingredients beforehand so you can assemble the drink easily. This step makes the process quicker and more organized.
  2. In a glass or shaker, add blackberries, mint leaves, lime juice, and sugar. Use a muddler to gently crush them until the berries release their juices and the mint becomes fragrant. Be careful not to over-muddle the mint, as it can turn bitter.
  3. Pour in the coconut milk and white rum into the muddled mixture. Stir or shake gently to combine everything evenly. The coconut milk will give the drink a creamy texture that balances the tartness of the berries.
  4. Fill the glass with ice cubes to keep the drink chilled. Top it off with club soda or sparkling water for that refreshing fizz. Stir lightly to blend all the flavors without losing the bubbles.
