Blackberry Hot Honey Brie Bites Recipe

I recently made these Blackberry Hot Honey Brie Bites for a family gathering, and they disappeared from the serving tray in minutes. The combination of creamy brie, juicy blackberries, crunchy pistachios, and spicy hot honey creates an incredible balance of flavors. I love how elegant they look while being surprisingly easy to prepare
Total Time 25 minutes
Servings: 4

Ingredients

  • 200 g brie cheese cut into bite-sized cubes – Use a good-quality brie for the creamiest texture and rich flavor.
  • 1 cup fresh blackberries lightly mashed – Fresh berries provide the best texture and natural sweetness.
  • ½ cup shelled pistachios finely chopped – Adds a crunchy coating and nutty flavor.
  • 2 tablespoons breadcrumbs – Helps the pistachio crust become extra crispy while baking.
  • 1 tablespoon olive oil – Encourages even browning and crispness.
  • 2 tablespoons hot honey – Creates a sweet and spicy finish that pairs beautifully with brie.
  • ¼ cup pomegranate seeds – Adds a juicy crunch and vibrant color.
  • ¼ teaspoon sea salt – Enhances all the flavors without overpowering them.
  • ¼ teaspoon black pepper – Adds subtle warmth and balance.
  • Fresh thyme leaves for garnish – Provides freshness and an aromatic touch.

Method

  1. Cut the brie into evenly sized cubes so they bake at the same rate. Keeping the pieces similar in size helps create consistent texture throughout the batch. Place the cubes on a plate while preparing the coating ingredients.
  2. Combine the chopped pistachios, breadcrumbs, sea salt, and black pepper in a mixing bowl. Stir everything together until evenly distributed. This mixture creates the crispy outer layer that contrasts beautifully with the creamy cheese.
  3. Lightly roll each brie cube through the pistachio mixture until coated on all sides. Press gently so the coating adheres properly. Arrange the coated cubes on a parchment-lined baking sheet with a little space between each piece.
  4. Drizzle the olive oil lightly over the prepared brie bites. This helps the crust become golden and crispy during baking. Avoid using too much oil so the coating remains crunchy rather than greasy.
  5. Place the baking sheet in a preheated oven at 400°F (200°C). Bake for about 8–10 minutes until the cheese softens and the pistachio coating becomes lightly golden. Watch carefully to prevent the cheese from melting completely.
  6. While the brie bites bake, lightly mash the fresh blackberries in a small bowl. The berries should remain slightly chunky for the best texture. This fresh topping adds brightness and natural sweetness.
  7. Remove the baked brie bites from the oven and allow them to cool slightly. Spoon a small amount of mashed blackberry mixture over each piece. Drizzle with hot honey for the perfect sweet and spicy finish.
  8. Sprinkle pomegranate seeds over the top for extra crunch and color. Add a few fresh thyme leaves for a fresh herbal note. Serve immediately while the cheese is still warm and creamy.

Notes

  • I always use fresh blackberries because they provide better texture and brighter flavor than frozen berries.
  • I prefer finely chopping the pistachios because they stick to the brie more evenly.
  • I like warming the hot honey slightly before drizzling so it spreads beautifully.
  • I usually chill the brie for 15 minutes before coating it because it is easier to handle.
  • I add the pomegranate seeds just before serving to keep them fresh and juicy.
  • I avoid overbaking because the brie can melt too much and lose its shape.
