Brie and Cranberry Tart Recipe

I have to tell you, this Brie and Cranberry Tart became an instant favorite the first time I made it. Picture this: crumbly puff pastry, creamy melted brie, and a burst of tangy-sweet cranberry goodness baked into a golden appetizer. Honestly, it’s the kind of recipe that makes people gush, “What’s in this?!” And the best part? It’s ridiculously easy to make.

Ingredients
  

  • Puff pastry
  • Brie keep the rind on
  • Fresh cranberries
  • Brown sugar
  • Ground cinnamon
  • Fig preserves or honey
  • Egg beaten
  • Coarse sugar
  • Fresh thyme

Method
 

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper. This gives you a non-stick surface and makes cleanup a breeze.
  2. Toss the fresh cranberries in a bowl with brown sugar and cinnamon. This gives them just enough sweetness and a cozy hint of spice. Adjust the sugar to your taste if you prefer sweeter tarts.
  3. Roll out the puff pastry sheets to smooth out any creases. Then, slice each sheet into six neat rectangles. You’ll have enough for a crowd or an extra stash for yourself.
  4. Spread a dollop of fig preserves on each rectangle, leaving a thin border. Top it with two slices of Brie, then mound a generous spoonful of the sweetened cranberries over the cheese. The colors already look so inviting!
  5. Fold the edges inward slightly, brush the borders with beaten egg, and sprinkle with coarse sugar for that perfect golden crunch. Bake in the oven for 15-20 minutes until the pastry is puffed and golden, and the Brie is irresistibly melty.
  6. Once out of the oven, sprinkle fresh thyme leaves over your tarts for a pop of green and a savory balance. Serve warm and watch them disappear in moments!

Notes

Don’t oversweeten: Cranberries are naturally tart, but too much sugar can overwhelm their flavor. Taste and adjust the sweetness as needed.
Keep the brie cold: Chilled brie is easier to slice evenly, so pop it in the fridge while prepping other ingredients.
Use parchment paper: This prevents the puff pastry from sticking to the baking sheet and saves you from scrubbing afterward!
