Brown Sugar Pecan Baked Oatmeal Recipe

I first made this brown sugar pecan baked oatmeal on a chilly Sunday morning when I was craving pecan pie but definitely didn't have the energy to roll out dough. I mixed everything in one bowl, poured a sticky brown sugar pecan topping over the top, and the whole kitchen smelled like dessert within minutes.
Prep Time 10 minutes
Cook Time 35 minutes
Servings: 6

Ingredients

  • 2 cups old-fashioned rolled oats — gives the base its chewy texture quick oats will turn mushy here
  • 1 teaspoon baking powder — helps the oatmeal puff up slightly instead of baking flat and dense
  • 1 teaspoon ground cinnamon — brings the warm cozy spice that makes this taste like pecan pie
  • 2 cups whole milk — keeps the baked oatmeal soft and custardy instead of dry
  • 1 large egg — helps everything bind together as it bakes
  • ¼ cup packed brown sugar — adds that deep caramel-like sweetness pecan pie is known for
  • 2 tablespoons unsalted butter melted — adds richness to the oat base, don't skip this for the best texture
  • 2 teaspoons vanilla extract — rounds out the sweetness of the whole dish
  • ¼ teaspoon kosher salt — balances the sugar so the dish doesn't taste flat
  • 1 cup pecans coarsely chopped — the star of the topping, toast them lightly first if you want extra crunch
  • ¼ cup maple syrup — thickens into a glossy glaze over the pecans as it warms
  • 2 tablespoons unsalted butter for the topping — helps the maple syrup and pecans turn glossy and sticky
  • 1 teaspoon vanilla extract for the topping — deepens the caramel flavor of the pecan glaze

Method

  1. Start by heating your oven to 350°F so it's fully ready by the time your batter is mixed. In your baking dish, stir together the rolled oats, baking powder, and ground cinnamon until they're evenly combined. This step takes less than a minute but sets up the base for everything else.
  2. In a separate bowl, whisk the milk, egg, brown sugar, melted butter, vanilla extract, and salt until fully combined. Take a moment to make sure the sugar is dissolved, since clumps can leave uneven sweetness once baked.
  3. Pour the wet mixture directly into the dish with your oats and stir everything together until no dry spots remain. Use your spatula to spread it into an even layer across the dish so it bakes uniformly from edge to edge.
  4. In a small saucepan over medium heat, combine the chopped pecans, maple syrup, butter, and vanilla extract. Stir occasionally for three to four minutes until the butter melts fully and the syrup thickens slightly into a glaze.
  5. Pour the warm pecan topping evenly over the oatmeal mixture in the baking dish, letting it settle into the surface. Slide the dish into your preheated oven and bake for about 35 minutes, until the top turns golden and the center is just set.
  6. Let the baked oatmeal rest for five minutes once it's out of the oven, since it firms up a little as it cools. Serve it warm straight from the dish, spooning out portions so everyone gets a good mix of oats and pecan topping.

Notes

  • I always toast my pecans in a dry pan for a couple of minutes before adding them to the topping, since it deepens the flavor so much.
  • I use whole milk instead of a lighter option because it keeps the texture soft and custardy rather than dry.
  • I let the dish rest for a few minutes after baking, which helps it set and makes serving so much cleaner.
  • I sometimes swap half the brown sugar for maple syrup in the base for a slightly more caramelized flavor throughout.
  • I double the batch on weekends since it reheats beautifully and saves me from cooking breakfast for days.
