Buffalo Chicken Dip Recipe

I still remember the first time I brought this dip to a friend's game day party the dish was scraped clean before halftime, and three people asked me for the recipe before I even left. Since then, it's become my go-to whenever I need a crowd-pleaser that comes together fast
Prep Time 10 minutes
Cook Time 35 minutes
Servings: 12

Ingredients

  • 3 large boneless skinless chicken breasts, cooked and shredded – this is your protein base, and rotisserie chicken works great if you're short on time
  • 8 ounces cream cheese cubed – cubing it helps it melt down smoothly instead of clumping in the sauce
  • 1 cup ranch dressing – adds that classic tangy herby flavor that balances the heat
  • 1 cup hot sauce I use Frank's RedHot – this is the backbone of the buffalo flavor, so don't skimp
  • 1 teaspoon freshly ground black pepper – a small touch that rounds out the seasoning
  • 1 teaspoon garlic powder – adds depth without overpowering the sauce
  • ½ cup green onion chopped – gives a fresh bite and a nice pop of color
  • 1.5 cups mozzarella cheese shredded, divided – melts beautifully and keeps the dip gooey
  • 1.5 cups cheddar cheese shredded, divided – brings sharpness and that golden baked top

Method

  1. If you're starting with raw chicken, bring a large pot of water to a boil, add the chicken breasts, and let them poach for about 25 minutes with the heat off and the lid on. Once they're cool enough to handle, shred them with two forks. This step takes the longest, so I often do it a day ahead to save time later.
  2. While the chicken cooks or rests, preheat your oven to 350°F and spray a 9x9-inch baking dish with non-stick cooking spray. Having this ready means you can move straight from stovetop to oven without any scrambling once your sauce is done.
  3. In a medium saucepot over medium-low heat, combine the cubed cream cheese, ranch dressing, hot sauce, black pepper, and garlic powder. Whisk constantly until the cream cheese fully melts into the sauce and everything looks smooth and creamy.
  4. Remove the sauce from the heat and stir in the shredded chicken, chopped green onion, and one cup each of the mozzarella and cheddar cheese. Mix well so every bit of chicken gets coated in that spicy, creamy sauce.
  5. Transfer the mixture into your prepared baking dish and top with the remaining cheese. Bake for 20-30 minutes, then switch to broil for 2-3 minutes to get that gorgeous golden top. Watch it closely during broiling so it doesn't burn.
  6. Pull the dip out once it's bubbling and lightly browned on top. Let it sit for a couple of minutes before serving so it firms up just slightly and is easier to scoop.

Notes

  • I always shred my own cheese instead of buying pre-shredded bags it melts so much smoother and creamier.
  • I warm my cream cheese for 10-15 seconds in the microwave before adding it to the pot, which helps it melt faster and more evenly.
  • I like using rotisserie chicken when I'm short on time; it saves nearly 30 minutes of prep.
  • I always taste my sauce before baking and add extra hot sauce if I want more kick.
  • I broil for just a couple of minutes at the end because that's what gives me the best golden, bubbly top.
