Start by bringing your steaks to room temperature. Simply take them out of the fridge and give them about 30 minutes to rest. This helps them cook evenly. Rub both sides of the steaks with Cajun seasoning, salt, and pepper, letting all that flavor sink into the meat. Make sure to press it in gently with your hands!
While the steaks rest, melt unsalted butter in a small pan over medium heat. Add minced garlic and chopped rosemary or thyme to the butter and stir until your kitchen smells amazing. Next, stir in bourbon until the mixture starts to bubble, then turn the heat off. This sauce will be your secret weapon!
Generously brush the butter sauce over each side of the seasoned steaks. Don’t hold back! The more coated, the better. Marinate the steaks for at least 20 minutes to lock in the rich, smoky flavors.
Preheat your grill or skillet until it’s smoking hot. (A hot surface is key for a beautifully seared crust.) Place your marinated steaks on the grill or pan and sear for 3-4 minutes on each side for medium-rare. If you prefer them more well done, just add a couple more minutes.
Once done, take the steaks off the heat and cover them with foil for about 5 minutes. This gives the juices time to settle, making each bite tender and juicy.
