Cajun Salmon w/ Mango Salsa Recipe

I still remember the first time I made this Cajun Salmon with Mango Salsa — the aroma of spices filled my kitchen instantly. I couldn’t wait to taste that perfectly seasoned salmon topped with sweet, juicy mango. Every bite gave me the perfect balance of heat and tropical freshness.

Ingredients
  

  • 2 salmon filets 4–6 oz each – Use fresh salmon for the best texture and natural flavor.
  • 1 ½ teaspoons brown sugar – Adds light sweetness to balance the spices.
  • ¾ teaspoon paprika – Smoked paprika adds deeper flavor.
  • ¾ teaspoon garlic powder – Provides savory richness.
  • ¾ teaspoon onion powder – Enhances overall seasoning.
  • ½ teaspoon dried oregano – Brings earthy notes.
  • ½ teaspoon dried thyme – Complements salmon beautifully.
  • ¼ teaspoon ground ginger – Adds warmth and subtle spice.

  • ¼ teaspoon salt – Essential for proper seasoning.
  • 1 tablespoon olive oil – Helps create a nice sear and keeps salmon moist.
  • 1 tablespoon orange juice – Adds brightness and slight sweetness.
  • 1 tablespoon lime juice – Enhances flavor and balances richness.
  • 2 ripe mangoes diced – Choose firm but ripe mango for best texture.
  • 1 small red bell pepper diced – Adds crunch and color.
  • ¼ cup red onion finely diced – Provides sharpness to balance sweetness.
  • 4 tablespoons fresh cilantro chopped – Adds fresh herbal flavor.
  • 1 –2 tablespoons fresh lime juice – Brightens the salsa.
  • 1 cup cooked white rice – Optional base for serving.
  • ½ avocado sliced – Adds creaminess.
  • ¼ cup chipotle aioli or sauce optional – For smoky heat.

Method
 

  1. Start by mixing brown sugar, paprika, garlic powder, onion powder, oregano, thyme, ginger, cayenne, and salt in a bowl. This blend creates the signature Cajun flavor. Make sure everything is evenly combined so the seasoning spreads properly.
  2. In a separate bowl, combine olive oil, orange juice, lime juice, and part of the spice mixture. Coat the salmon evenly and let it marinate for at least 30 minutes. This step helps the flavors absorb deeply into the fish.
  3. While the salmon marinates, dice the mango, bell pepper, and red onion. Mix them with cilantro and fresh lime juice. Let the salsa sit so the flavors blend together naturally.
  4. Heat olive oil in a non-stick skillet over medium heat. Place salmon skin-side up and cook for 4–6 minutes. Flip carefully and cook another 4–6 minutes until the salmon flakes easily.
  5. Place cooked salmon over rice if using. Top generously with mango salsa. Add avocado slices and optional chipotle sauce for extra flavor.

Notes

  • I always pat the salmon dry before seasoning to help it sear better.
  • Letting it marinate longer enhances flavor depth.
  • I prefer using ripe but firm mango to avoid mushy salsa.
  • I allow the salmon to rest a few minutes before serving to keep it juicy.
  • Fresh lime juice makes a big difference in brightness.
