Caramelized Beet and Pear Towers with Feta Snow Recipe

I still remember the first time I made these caramelized beet and pear towers—it honestly felt like plating edible art in my own kitchen. I was surprised by how simple ingredients turned into something so elegant and restaurant-like. The combination of earthy beets, sweet pears, and salty feta just worked beautifully together.

Ingredients
  

  • Beets 2 large, peeled and sliced into ¼-inch rounds – roast until naturally sweet and tender; choose firm beets for structure
  • Pears 2 firm, cored and sliced into ¼-inch rounds – use slightly underripe pears so they hold shape during cooking
  • Olive oil 2 tablespoons – helps caramelize and deepen flavor while roasting
  • Balsamic vinegar 1 tablespoon – adds a gentle tang that enhances sweetness
  • Feta cheese ¼ cup, block preferred – grate fresh for a light “snow” texture instead of clumps
  • Honey 2 tablespoons – creates a glossy, sweet drizzle that balances salty feta
  • Orange zest 1 teaspoon – gives bright citrus aroma and freshness
  • Orange juice 1 tablespoon – adds acidity to cut through richness
  • Salt and black pepper to taste – essential for enhancing natural sweetness of beets and pears
  • Fresh thyme leaves for garnish – optional but adds earthy fragrance and elegance

Method
 

  1. Preheat your oven to 200°C (400°F) so everything roasts evenly and caramelizes well. Toss beet slices with olive oil, salt, and pepper before arranging them on a baking tray. Roast until tender and slightly caramelized for deep earthy sweetness.
  2. Heat a skillet and cook pear slices with a touch of balsamic vinegar for natural sweetness. Let them soften slightly while developing golden edges without turning mushy. This step brings out their fruity depth and balances the earthy beets.
  3. Mix honey, orange zest, and orange juice in a small bowl until smooth and fragrant. Let it sit for a few minutes so flavors blend naturally. This becomes your glossy finishing sauce for the towers.
  4. Start layering beet and pear slices alternately on a serving plate. Stack carefully to form stable mini towers with balanced height. Finish by adding feta snow and citrus honey drizzle right before serving.

Notes
