Cauliflower Sausage Kale Soup Recipe

When I first made this cauliflower sausage kale soup, I knew it was a keeper. My kitchen filled with the warmest, coziest aromas, and with each spoonful, I felt like I’d found my new favorite comfort food.

Ingredients
  

  • 2 tablespoons olive oil: For a fragrant start to your soup.
  • 12 ounces sausage your favorite variety: Smoky or sweet works well here.
  • 1 medium onion chopped: Adds a sweet depth of flavor.
  • 3 cloves garlic minced: A must for that irresistible aroma.
  • 1 medium head of cauliflower cut into small florets: Tender and slightly nutty.
  • 4 cups kale chopped: Use fresh kale for the best texture; skip frozen.
  • 4 cups chicken broth: Choose a good-quality broth for maximum flavor.
  • 1 teaspoon salt: Adjust to taste.
  • ½ teaspoon black pepper: Enhances all the other flavors.
  • ½ teaspoon red chili flakes optional: For a little kick of heat.

Method
 

  1. Start by heating olive oil in a large pot over medium heat. Once it shimmers, toss in the chopped onion and minced garlic. Stir them until they soften up, filling your kitchen with a mouthwatering aroma.
  2. Add sliced sausage to the pot, stirring occasionally. The sausage will brown beautifully and infuse the base with that signature smoky savoriness we love.
  3. Toss cauliflower florets and kale into the pot. Stir well to coat the veggies in those savory juices. This step begins to build layers of flavor in your soup.
  4. Now, pour in the chicken broth, making sure it covers all the veggies. Season with salt, black pepper, and red chili flakes if you want some heat. Bring everything to a boil, then lower the heat to a simmer.
