Cheddar Parmesan Garlic Butter Chicken with Creamy Shells

I made this dish on a random Tuesday when I wanted something cozy but didn't want to spend hours in the kitchen. One bite of that garlicky, cheesy sauce and I knew I'd be making it again and again. The chicken comes out golden and juicy, and the pasta soaks up every bit of that rich cheddar Parmesan sauce

Ingredients
  

  • 4 boneless skinless chicken breasts – the star of the dish; pound them to an even thickness so they cook evenly
  • Salt & black pepper to taste – seasons the meat from the inside out
  • 1 tsp paprika – adds color and a subtle smoky warmth
  • 1 tbsp olive oil – helps get that golden sear without burning the butter
  • 3 tbsp butter – for richness; go for real butter not margarine, for the best flavor
  • 3 cloves garlic minced – fresh garlic makes a huge difference here over the jarred kind
  • 2 cups dry pasta shells – the ridges and pockets hold the sauce beautifully
  • 2 tbsp butter – builds the base of the garlic sauce
  • 2 cloves garlic minced – mince it fresh right before cooking so it doesn't turn bitter
  • 1 cup heavy cream – gives the sauce its silky texture; don't swap in milk it won't thicken the same way
  • ½ cup chicken broth – balances the richness and thins the sauce just enough
  • 1 cup shredded cheddar cheese – shred it yourself from a block; pre-shredded cheese has anti-caking agents that make sauces grainy
  • ½ cup grated Parmesan cheese – freshly grated Parmesan melts smoother and tastes sharper than the powdery kind
  • Salt & pepper to taste – always taste before serving and adjust
  • Fresh parsley chopped, for garnish – adds a pop of color and freshness against all that cheese

Method
 

  1. Bring a large pot of salted water to a boil and add your pasta shells. Cook them until al dente, following the package timing as a guide. Drain well and set the shells aside while you work on the chicken and sauce.
  2. Pat the chicken breasts dry, then season both sides with salt, pepper, and paprika. Heat olive oil in a large skillet over medium-high heat until it shimmers. Sear the chicken for 5 to 6 minutes per side until golden brown and fully cooked, then set it aside on a plate.
  3. In that same skillet, melt the butter over medium heat, scraping up any browned bits left from the chicken. Add the minced garlic and sauté for about 30 seconds, just until fragrant. Be careful not to let it brown, since burnt garlic turns bitter fast.
  4. Pour in the heavy cream and chicken broth, then let the mixture simmer for 2 to 3 minutes until it starts to thicken slightly. Stir in the shredded cheddar and grated Parmesan a little at a time until fully melted and smooth. Season with salt and pepper to taste.
  5. Add the cooked pasta shells directly into the skillet, tossing gently so every piece gets coated in that cheesy sauce. Nestle the seared chicken breasts on top of the pasta, letting them warm through in the sauce for a minute or two. This lets all the flavors come together in one pan.
  6. Sprinkle freshly chopped parsley over the top for a bright, fresh finish. Serve the dish immediately while it's hot and the sauce is at its creamiest. This is the moment where all that effort really pays off.

Notes

  • I always pound my chicken breasts to an even thickness first, so they cook at the same rate and don't dry out on one side.
  • I like to reserve a splash of pasta water before draining, just in case my sauce needs thinning later.
  • I never rush the garlic step — 30 seconds is really all it needs, and going longer makes it bitter.
  • I shred my own cheese instead of buying pre-shredded bags, since it melts so much smoother into the sauce.
  • If I want extra cheesy indulgence, I sprinkle more cheddar on top and broil it for 2 to 3 minutes until bubbly and golden.
