Start by preheating your oven to 400°F (200°C) or preparing your grill for indirect heat. While this heats up, you can prep your ingredients.
Tear off large sheets of heavy-duty aluminum foil. You’ll need one per serving, with enough space to fold tightly over the burger and veggies like a pouch.
Wash your veggies thoroughly, then dice your potatoes into small cubes. Slice carrots, peppers, zucchini, and red onion into bite-sized pieces. It should all be easy to eat with a fork once cooked!
Place your chopped vegetables in a mixing bowl. Add a generous drizzle of olive oil, along with garlic powder, salt, and pepper. Toss everything until the veggies are evenly coated in seasoning.
Lay a foil sheet flat and place a burger patty in the center. Top the patty with a slice of cheese and a pile of your seasoned veggies and potatoes. Repeat for each serving.
Bring the edges of the foil up and fold them over each other to seal the packet tightly. This will trap the steam and flavors inside while cooking.
Place the foil packets directly on the grill or arrange them on a baking sheet in the oven. Cook for 20-25 minutes, making sure the burgers are done to your liking and the veggies are tender. Open one packet to test doneness if needed!
Carefully open the foil packets (watch out for the steam). Slide the burger into a bun, add your favorite condiments, and serve the veggies and potatoes alongside it. Dig in!
