Cheesy Potato Casserole Recipe

I still remember the first time I made this cheesy potato casserole for a Sunday dinner, and it disappeared before I even sat down to eat. I love how just a handful of pantry staples turn into something this creamy, cheesy, and downright addictive.
Prep Time 15 minutes
Cook Time 45 minutes
Servings: 8

Ingredients

  • 2 cups sour cream – this is what gives the casserole its rich tangy creaminess
  • 1 can 10.75 oz condensed cream of chicken soup – acts as the glue that holds everything together
  • 1/2 cup butter melted – adds richness and helps the topping turn golden
  • 1 tablespoon garlic salt – the easiest way to season every bite evenly
  • 1 cup chopped onions – gives a mild savory bite that balances the cheese
  • 30 oz frozen shredded hash browns partially thawed (or 2 lbs fresh potatoes, shredded) – the heart of the dish, so use good quality potatoes
  • 2 cups shredded cheddar cheese – grate it fresh if you can pre-shredded cheese doesn't melt as smoothly
  • 1/2 cup crushed cornflakes or crushed potato chips – this is my go-to for that crunchy top layer

Method

  1. I always start by setting my oven to 350°F so it's fully heated by the time my casserole is ready to go in. A properly preheated oven makes a big difference in how evenly the top browns. I also take a minute to grease my baking dish lightly so nothing sticks once it's baked and bubbly.
  2. If I'm using frozen hash browns, I let them thaw just enough to break apart but not fully defrost into mush. For fresh potatoes, I shred them on a box grater and give them a quick rinse to remove extra starch. Either way, I pat them lightly dry so my casserole doesn't turn watery.
  3. In a large bowl, I whisk together the sour cream, condensed soup, melted butter, and garlic salt until it's completely smooth. This creamy base is really what makes the dish taste like real comfort food. I make sure there are no lumps before moving forward.
  4. Next, I fold in the potatoes, chopped onions, and most of the shredded cheddar cheese, saving a little for the top. I stir gently but thoroughly so every potato shred gets coated in that cheesy, creamy mixture. This is the step where the casserole really starts coming together.
  5. I spread the mixture evenly into my prepared 9×13 dish, pressing it down lightly with a spatula. Then I sprinkle the remaining cheese over the top so it melts into a golden, bubbly layer. An even layer here means every scoop gets the same cheesy goodness.
  6. I toss my crushed cornflakes or potato chips with a little melted butter, then scatter it evenly over the cheese. This crunchy topping is honestly my favorite part of the whole dish. It adds texture that contrasts beautifully with the creamy potatoes underneath.
  7. I bake it uncovered for about 45 minutes, until the edges are bubbling and the top is golden brown. My kitchen smells incredible at this point, and it's always hard to wait. I let it rest for five minutes before serving so it sets up nicely.

Notes

  • I always shred my own cheese instead of buying pre-shredded, since it melts so much smoother.
  • I let my hash browns partially thaw on the counter instead of using a microwave, which keeps them from turning soggy.
  • I season my potato mixture a little before adding salt from the soup and garlic salt, since both already carry sodium.
  • I like mixing cheddar with a bit of mozzarella when I want extra stretch and gooeyness.
  • I always let the casserole rest for a few minutes after baking so it doesn't fall apart when I scoop it.
