Cheesy Spinach Artichoke Chicken Recipe

I made this cheesy spinach artichoke chicken on a random weeknight when I wanted something comforting but didn't want to spend an hour in the kitchen, and it completely won me over. I love that it tastes like the classic spinach-artichoke dip everyone fights over at parties, except now it's a full dinner.

Ingredients
  

  • 4 boneless skinless chicken breasts – the star of the dish, so pick even-sized pieces for uniform cooking
  • 2 tbsp olive oil – helps the chicken sear to a deep golden brown before it hits the oven
  • Salt and black pepper to taste – seasons the chicken from the inside out, don't skip this step
  • 8 oz cream cheese softened – the base of that rich, creamy texture, so let it soften fully first
  • 1/2 cup sour cream – adds tang and keeps the sauce from feeling too heavy
  • 1 cup fresh spinach chopped – don't use frozen spinach, fresh wilts better and keeps the sauce from turning watery
  • 1 cup artichoke hearts chopped – go for the ones packed in water, not oil, for a cleaner flavor
  • 1 cup shredded mozzarella cheese – melts beautifully and gives that gooey stretchy top layer
  • 1/2 cup grated Parmesan cheese – grate it fresh if you can it melts smoother than the pre-shredded kind
  • 3 cloves garlic minced – fresh garlic brings way more depth than the jarred version
  • 1/2 tsp red pepper flakes optional – adds a gentle kick if you like a little heat
  • 1 tbsp fresh lemon juice – brightens the richness of the cheese and cream

Method
 

  1. Pat the chicken breasts dry with a paper towel so they sear properly instead of steaming in the pan. Season both sides generously with salt and pepper. This step matters more than people think, since underseasoned chicken makes the whole dish taste flat later on.
  2. Heat olive oil in your oven-safe skillet over medium-high heat until it shimmers. Add the chicken and cook for 3-4 minutes per side, just until golden brown on the outside. It doesn't need to be fully cooked through yet, since it will finish roasting in the oven.
  3. In a mixing bowl, combine the softened cream cheese, sour cream, chopped spinach, artichokes, half the mozzarella, Parmesan, garlic, and lemon juice. Stir until everything is evenly distributed and creamy. This mixture is essentially your favorite dip, just built to top a chicken breast.
  4. Spread the spinach artichoke mixture evenly over each seared chicken breast in the skillet. Sprinkle the remaining mozzarella on top so it forms a golden, bubbly crust as it bakes. If you're using red pepper flakes, this is the moment to scatter them on.
  5. Transfer the skillet to a 400°F oven and bake for 15-18 minutes, until the chicken reaches an internal temperature of 165°F and the top is bubbling and lightly browned. Use a meat thermometer to double check, since chicken thickness can vary a lot between breasts.
  6. Let the chicken rest for about 5 minutes before serving. This keeps the juices inside the meat instead of spilling out onto your cutting board. Then plate it up while the cheese is still melty and inviting.

Notes

  • I always pound my chicken breasts to an even thickness first, since it helps them cook evenly and prevents dry edges.
  • I like to reserve a little extra Parmesan to sprinkle on right after baking for an extra hit of savory flavor.
  • I've learned to squeeze out any excess moisture from the artichokes before chopping them, or the filling can turn a bit runny.
  • When I'm short on time, I use a rotisserie-chicken shortcut version by folding the filling into shredded chicken and baking it as a casserole instead.
  • I sometimes broil the dish for the last 1-2 minutes to get that deep golden top, but I stay right by the oven so it doesn't burn.
