Prep Time 10 minutes
Cook Time 20 minutes

Ingredients

  • /2 pound bacon – Choose thick-cut bacon for that extra crunch and smoky taste. Chop it into bite-sized pieces for easy cooking.
  • 1 pound ground chicken – Ground chicken absorbs the seasonings beautifully. Ensure it’s fresh for the best flavor.
  • 1/2 yellow onion chopped – Adds a subtle sweetness to balance the salty and creamy elements.
  • 1 ranch seasoning packet – This is the heart of the recipe. Use a high-quality packet or homemade seasoning for maximum flavor.
  • 1 1/2 cups whole milk or 2% milk – Creates a creamy base for the sauce. Whole milk is recommended for a richer texture.
  • 1 tablespoon cornstarch – Helps thicken the sauce for the perfect non-runny consistency.
  • 1 cup shredded mozzarella cheese – Freshly shredded mozzarella melts better and enhances the dish.
  • 1 cup chopped cheddar cheese – Adds a bold and tangy flavor to the mix.

Method

  1. Start by heating a large skillet over medium-high heat. Cook the bacon pieces until crispy and golden, then remove them to a plate lined with paper towels. Drain excess fat, leaving about two tablespoons in the skillet for added flavor.
  2. Using the same skillet, add your ground chicken and chopped onion. Cook for 5-7 minutes, stirring occasionally. You want the chicken fully cooked and the onions soft and translucent.
  3. In a mixing bowl, whisk together the ranch seasoning packet, milk, and cornstarch. Pour this mixture into the skillet with the chicken and onions. Stir well and cook for 3-4 minutes. The sauce will thicken slightly and coat everything beautifully.
  4. Reduce the heat to low and stir in the shredded mozzarella. Once it’s melted and mixed in, sprinkle the chopped cheddar cheese and crispy bacon pieces on top. Gently fold them into the sauce, but don’t overmix – those cheesy bursts are part of the magic.
  5. Toast your favorite buns, scoop the chicken mixture on top, and serve immediately. Enjoy the rich flavors and creamy texture packed into every bite!

Notes

  • Toast Your Buns: This helps prevent sogginess and adds a slight crunch.
  • Drain Liquids: If your chicken releases too much moisture, drain it before adding the sauce.
  • Don’t Rush the Sauce: Cook the ranch mixture slowly, allowing it to thicken properly.
  • Freshly Shred Your Cheeses: Pre-shredded options usually contain anti-caking agents that affect how they melt.
  • Add Crunch: Toss in crispy onions or crumbled chips for an extra layer of texture.
