Chicken Brie Sandwich Recipe

I still remember the first time I bit into a chicken brie sandwich at a little café years ago, and I knew I had to recreate it at home. It took me a few tries to get the balance of sweet, savory, and creamy just right, but once I did, I never looked back

Ingredients
  

  • 4 boneless chicken breasts – the star of the sandwich pounded even for faster, more consistent cooking
  • 8 ounces brie cheese sliced – go for a good quality wedge and slice it cold for cleaner pieces
  • 2 tablespoons brown sugar – caramelizes on the chicken for that sweet-savory finish
  • 1 bunch watercress – adds a peppery bite that balances the richness of the brie
  • 2 tomatoes sliced – choose ripe, firm tomatoes so the sandwich doesn't get soggy
  • ¼ red onion thinly sliced – gives a sharp crunch that cuts through the creamy cheese
  • 4 sandwich buns Kaiser or brioche – brioche adds extra softness and a hint of sweetness
  • Salt and pepper to taste – season the chicken generously for the best flavor
  • Butter or oil for cooking – use a neutral oil if you want less browning on the chicken
  • Mayonnaise for spreading – I like a thin layer to help everything stick together

Method
 

  1. Start by slicing each chicken breast in half lengthwise if they're on the thicker side. This helps them cook faster and more evenly. Season both sides generously with salt and pepper. I always season a few minutes before cooking so the flavor really sinks in.
  2. Heat a skillet over medium-high heat and add a bit of butter or oil. Once it's hot, place the chicken in and let it sear for about 3 to 4 minutes per side. During the last two minutes, sprinkle the brown sugar over the chicken so it can caramelize slightly.
  3. As soon as the chicken comes off the heat, lay the brie slices right on top while it's still hot. The residual heat is enough to melt the cheese into a gooey, creamy layer without overcooking it. I usually cover the pan loosely for a minute to speed this up.
  4. While the chicken rests, slice your buns in half and toast them lightly in the same skillet with a touch of butter. This adds a nice golden crunch and keeps the bread from turning soggy once you add the toppings.
  5. Spread a thin layer of mayo on the toasted buns, then layer on the chicken with melted brie, followed by tomato, red onion, and watercress. Press the top bun down gently and serve immediately while everything is warm and melty.

Notes

  • I always pat the chicken dry before seasoning, it helps get a much better sear.
  • I like to slightly pound my chicken breasts so they cook evenly and stay juicy.
  • I never skip resting the chicken for a minute or two before assembling, it keeps the juices in.
  • I sometimes swap watercress for arugula when I can't find it, and it still tastes great.
  • I toast my buns every single time, it really does make a difference in texture.
