Chicken Caesar Salad with Fries

I still remember the first time I made this chicken Caesar salad with fries and hot honey. I wanted something that felt indulgent but didn't leave me sluggish afterward. Once I paired crispy air-fried chicken with golden fries and a creamy homemade Caesar dressing, I knew this recipe was a keeper.

Ingredients

  • romaine or cos lettuce sturdy enough to hold the dressing without wilting too fast
  • light mayonnaise anchovy paste, apple cider vinegar, Worcestershire sauce, and lemon juice, these five together are what give Caesar dressing its signature depth
  • honey hot sauce, and chili flakes, this trio makes the hot honey drizzle that ties the whole dish together

Method
 

  1. Pound the chicken breast until it's thin and even, which helps it cook quickly without drying out. Mix it with Greek yogurt, lemon juice, Dijon mustard, garlic, paprika, salt, and pepper. Let it sit in the fridge for thirty minutes to an hour so the flavor really soaks in.
  2. While the chicken marinates, combine panko breadcrumbs with grated parmesan, garlic powder, paprika, salt, and pepper. Rinse your cut potatoes in cold water to wash away excess starch, then soak them briefly for extra crispiness. Pat them completely dry before tossing with olive oil and seasoning.
  3. Press the marinated chicken into the breadcrumb mixture so it sticks on all sides. Place it in the air fryer basket alongside the seasoned fries. Cook at around 390°F for fifteen to eighteen minutes for the chicken, flipping halfway, while the fries take roughly fifteen to twenty minutes.
  4. Whisk together light mayonnaise, Greek yogurt, garlic, Dijon mustard, anchovy paste, vinegar, Worcestershire sauce, lemon juice, and parmesan. Season with salt and pepper, then adjust the thickness with a touch more yogurt or lemon juice until it feels just right.
  5. Toss the chopped lettuce through the dressing until every leaf is coated. Plate it alongside the crispy chicken and hot fries, then whisk together honey, hot sauce, and chili flakes for the drizzle. Pour it over the chicken and finish with a little extra parmesan on top.

Notes

  • I never skip the yogurt marinade because it keeps the chicken tender even after air frying
  • soaking the potatoes really does make a difference, so I try not to rush that step
  • I cook the chicken and fries together whenever my air fryer basket allows it, since it saves so much time
  • I always taste my dressing before tossing the salad, since lemon juice amounts can vary depending on the fruit
  • if I want extra crunch, I give the chicken a light spray of olive oil right before air frying
