Chicken Foil Packets Recipe

I first made chicken foil packets on a lazy Sunday when I didn't want to wash a single extra dish, and now I make them almost every week in summer. Each packet turns into its own little loaded baked potato with juicy chicken tucked right in, melted cheese on top, and crispy bacon over everything

Ingredients
  

  • 3 boneless chicken breasts cut lengthwise into 4 strips each – smaller strips cook evenly and stay juicy inside the sealed foil
  • 1.8 lb bag petite red potatoes cut into quarters – red potatoes hold their shape instead of turning mushy
  • ½ yellow onion finely chopped – adds sweetness as it softens in the packet
  • 6 tablespoons butter melted – coats everything so the seasoning sticks and keeps the chicken moist
  • 1 tablespoon minced garlic – fresh garlic gives a stronger rounder flavor than powder alone
  • 1 teaspoon smoked paprika – brings a warm smoky base note to the seasoning
  • ½ teaspoon chipotle chili powder – adds gentle background heat not an overpowering spice
  • 2 teaspoons salt – balances and lifts every other flavor in the packet
  • 1 teaspoon ground black pepper – for a mild peppery kick
  • 2 teaspoons garlic powder – layers extra savory flavor alongside the fresh garlic
  • 6 strips bacon cooked and chopped – gives that classic loaded baked potato crunch
  • 3 cups Colby Jack cheese shredded – melts smooth and mild, so grate it fresh for the best melt
  • ¼ cup chives chopped – a fresh, oniony finish sprinkled on right before serving

Method
 

  1. Set your oven to 400°F so it's fully hot by the time your packets are ready. Tear off four long sheets of foil and fold each one in half to make it double thick. This extra layer keeps the packets sturdy and helps stop any leaks while baking.
  2. Put your cut potatoes in a large pot and cover them with cold water. Bring it to a boil and let them cook for about 6 minutes, just until slightly softened. Drain them, then let them cool before moving on to the next step.
  3. Once the potatoes have cooled a bit, add the chicken pieces, chopped onion, melted butter, minced garlic, and all your dry spices into the pot. Stir everything gently so the potatoes don't break apart, making sure each piece gets an even coat of seasoning.
  4. Pull the seasoned chicken out and set it aside for a moment. Divide the potato mixture evenly among your four foil sheets, about 1½ cups per packet, then lay three chicken strips on top of each pile. Fold the long sides of the foil up and over, then roll the edges together tightly to seal in the steam.
  5. Place the sealed packets on a baking sheet and slide them into the oven. Bake for 30 to 35 minutes, until the potatoes are fork-tender and the chicken reaches 165°F. Since you can't peek inside, a meat thermometer is the only reliable way to check.
  6. Carefully open each packet, keeping your face away from the steam since it's extremely hot. Drain off any extra liquid, then leave the packets open on the tray. Sprinkle Colby Jack cheese over the chicken in each one, then add the chopped bacon on top.
  7. Slide the open packets back into the oven for 2 to 3 minutes, just until the cheese turns melty. Finish with a scattering of fresh chives, then serve right in the foil for easy cleanup or scoop everything onto a plate.

Notes

  • I always fold my foil in half before building the packet, since a single layer tends to spring a leak and I lose all that buttery juice.
  • I cut my chicken and potatoes into similar-sized pieces so nothing finishes cooking too early or too late.
  • I let my par-boiled potatoes cool for a few minutes before mixing in the raw chicken, so the chicken isn't sitting on warm potatoes before it even hits the oven.
  • I keep a thermometer close by, because guessing doneness on a sealed packet is basically impossible.
  • I add the cheese and bacon after baking, not before, so they stay melty and crisp instead of turning soggy.
