Ingredients

  • 1 pound pizza dough: Freshly made or store-bought it’s the foundation of your pizza.
  • 2 tablespoons butter: Creates a rich golden roux for the sauce.
  • 2 tablespoons all-purpose flour: Thickens the creamy base to perfection.
  • 1 ½ cups whole milk: Adds a velvety texture to the sauce.
  • ¼ teaspoon ground nutmeg: Brings a subtle warmth to the flavor.
  • ½ teaspoon salt: Balances all the flavors beautifully.
  • ¼ teaspoon black pepper: Adds a gentle kick without overpowering.
  • 1 cup cooked shredded chicken breast: Rotisserie or leftover chicken works great here.
  • ¾ cup frozen peas and carrots: Thawed for better cooking and that classic pot pie vibe.
  • 1 ½ cups shredded mozzarella cheese: Freshly grated for the creamiest melt.
  • ¼ cup grated Parmesan cheese: Adds a sharp salty finish.
  • 1 tablespoon fresh parsley optional: For garnish and a pop of freshness.

Method

  1. Start by rolling out your pizza dough on a lightly floured surface. Shape it into an 8-inch circle or a 12-inch base, depending on your preference. Transfer the dough to a parchment-lined baking sheet or pizza stone for easy handling.
  2. In a large skillet, melt the butter over medium heat. Add the flour and whisk until it forms a smooth paste (your roux). Gradually pour in the milk, whisking constantly to avoid lumps. Cook for 2-3 minutes until the sauce thickens. Season with nutmeg, salt, and pepper, then remove from heat.
  3. Spread the creamy sauce evenly over the prepared dough, leaving a small border around the edges. Layer the shredded chicken, peas, and carrots evenly across the surface. Top it all off with mozzarella and Parmesan cheese for that gooey, cheesy finish.
  4. Preheat your oven to 450°F. Bake the pizza for 12-15 minutes, or until the crust is golden and the cheese is bubbling.
  5. Once out of the oven, sprinkle fresh parsley over the top for a burst of color. Slice it up and serve hot for the ultimate comfort food experience!

Notes

  • Preheat your pizza stone or baking sheet for a crispier crust.
  • Always thaw frozen veggies to avoid excess moisture.
  • Grate your cheese fresh for the best melt and texture.
  • Add a pinch of garlic powder to the dough for extra flavor.
  • Don’t overload the toppings; it helps the pizza cook evenly.
