I made this Chili Lime Watermelon with Labneh and Honey on a warm afternoon, and it instantly became one of my favorite summer recipes. I loved how the juicy watermelon blended beautifully with creamy labneh and sweet honey. The chili and lime added a bright, spicy kick that made every bite exciting.

Ingredients
  

  • 1 batch Easy Labneh Cheese – Use freshly prepared labneh for the best creamy texture.
  • 6 tablespoons honey plus extra if needed – Choose good-quality honey for natural sweetness.
  • 3 pounds mini watermelon chilled – Make sure it is ripe, sweet, and cold for maximum freshness.
  • ½ teaspoon chili powder plus more to taste – Adds smoky heat that balances the sweetness.
  • 2 tablespoons fresh lime juice – Always use freshly squeezed lime for bright flavor.
  • Reserved lime zest – Enhances aroma and adds citrus fragrance.
  • ½ teaspoon kosher salt plus more to taste – Helps bring out all the flavors.

Method
 

  1. Start by washing and drying the watermelon. Slice it into sticks, cubes, or wedges depending on your preference. Keeping it chilled ensures the most refreshing taste. Arrange the pieces neatly for easy seasoning.
  2. Place the watermelon in a single layer. Sprinkle chili powder, salt, and fresh lime juice evenly over the top. Turn gently so each piece absorbs the flavors. This step enhances sweetness while adding a mild spicy touch.
  3. Spread the labneh across a large platter. Drizzle honey generously over the creamy base. Arrange the seasoned watermelon on top, finish with lime zest, and serve immediately or chill briefly before enjoying.
