Cilantro Lime Noodles Recipe

When I first whipped up these Cilantro Lime Noodles, I was amazed at how such simple ingredients could create such bold, refreshing flavors. The combination of fresh cilantro, tangy lime, and aromatic spices turns ordinary noodles into something truly special.

Method
 

  1. Start by cooking your noodles according to the package instructions, but leave them slightly undercooked for a firmer texture. Once done, rinse them under cold water to stop the cooking process and prevent sticking. Set the noodles aside while you prepare the sauce.
  2. Finely chop the cilantro, garlic, and shallots, and place them in a heatproof bowl. Add the curry powder, chili powder, sugar, and a pinch of salt. This mixture will be the flavor-packed foundation of your dish.
  3. Heat the olive oil in a pot over medium-high heat until it’s hot and shimmering. Carefully pour the hot oil over the sauce ingredients in the bowl. The sizzling sound is your cue that the flavors are being released and intensified.
  4. Stir in the soy sauce, vegetarian mushroom oyster sauce, and fresh lime juice. Mix everything thoroughly to create a tangy, savory sauce with layers of flavor.
