Coconut Peach Lemonade Slushies Recipe

Ingredients
  

  • 2 cups frozen peaches
  • 1 cup coconut milk
  • 1 cup lemonade
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 cups ice cubes
  • 1 teaspoon vanilla extract
  • Fresh peach slices for garnish
  • Mint leaves for garnish

Method
 

  1. Before I start blending, I always make sure everything is cold and ready. Frozen peaches work best because they naturally give that thick slushy texture. If you’re using fresh peaches, I recommend freezing them for a few hours first. I also keep my coconut milk and lemonade chilled for better flavor balance. This step makes a big difference in achieving a refreshing icy drink instead of a watery one.
  2. Now I add all the ingredients into my blender in the right order. First go in the frozen peaches, followed by coconut milk and lemonade. Then I add honey, lemon juice, vanilla extract, and ice cubes. I usually make sure the liquids go in first so the blender runs smoothly.
  3. I blend everything on high speed until it turns thick and smooth. The texture should look like a soft slush rather than a watery juice. If it feels too thick, I add a splash of lemonade to loosen it slightly. If it feels too thin, I add more ice or frozen peaches for thickness. I always taste it at this stage to adjust sweetness or tanginess if needed.
  4. Once blended, I usually take a quick taste test before serving. If I want it sweeter, I add a bit more honey or a splash of syrup. If I want it more tangy, I add a little extra lemon juice. This step helps me personalize the drink based on my mood and preference. It’s also where the flavor balance really comes together beautifully.
  5. Finally, I pour the slushie into chilled serving glasses. I like to top it with fresh peach slices for a fruity touch. Sometimes I also add mint leaves to make it look more refreshing and vibrant. Serving it immediately is important so it stays icy and thick. Every time I serve it, it feels like a mini tropical dessert in a glass.
