Cottage Cheese Bowl Recipe

I made this cottage cheese bowl on a busy morning when I had zero energy to cook, and I was shocked by how good it tasted. It is creamy, filling, and ready in about ten minutes with no stove at all. I tried both a sweet bowl with berries and peanut butter and a savory bowl with tomato and avocado, and I honestly could not pick a favorite.
Total Time 10 minutes
Servings: 2

Ingredients

  • 1 cup cottage cheese: Use 2% for the best balance of creaminess and protein.
  • 1 cup berries about 130 g: Slice big strawberries so every bite gets fruit.
  • 1/3 cup granola about 35 g: It adds crunch, so add it right before eating.
  • 1 tablespoon peanut butter: Warm it for 10 seconds so it drizzles easily.
  • 1 teaspoon honey: A small drizzle adds sweetness without overpowering the tang.
  • Sprinkle of cinnamon: It adds a warm flavor without extra sugar.
  • 1 cup cottage cheese: The same 2% works well as a creamy base.
  • 1/2 cup cherry tomatoes sliced (about 75 g): Choose ripe, sweet ones for the best flavor.
  • 1/2 cup diced cucumber about 60 g: Pat it dry so your bowl stays thick and not watery.
  • 1/3 cup diced avocado about 35 g: Cut it last so it stays green and fresh.
  • 1 teaspoon olive oil: It adds richness and helps the toppings shine.
  • 1 teaspoon balsamic vinegar: A tiny splash gives a sweet tangy finish.
  • Sprinkle of bagel seasoning: It brings salty crunchy flavor in one shake.
  • Sprinkle fresh chives: Chop them fresh because dried chives taste flat here.

Method

  1. Wash the berries, tomatoes, and cucumber, then pat them dry with a clean towel. Slice the berries and tomatoes, and dice the cucumber and avocado into small cubes. Setting everything out first makes the final bowl feel quick and stress-free.
  2. Scoop one cup of cottage cheese into your serving bowl. Smooth the top with the back of a spoon so the toppings sit evenly. If the curds are not your thing, blend the cheese for 15 to 30 seconds until creamy.
  3. Pile the berries over the cottage cheese, then add the granola in a small mound. Drizzle on the peanut butter and honey, then finish with a sprinkle of cinnamon. It looks like dessert, but it works beautifully as a high protein cottage cheese bowl for breakfast.
  4. Arrange the tomatoes, cucumber, and avocado on top of the cottage cheese in small sections. Drizzle with olive oil and balsamic vinegar, then sprinkle on the chives and bagel seasoning. Add a pinch of salt and pepper if you like, since it brings all the flavors forward.
  5. Grab a spoon and eat the bowl while the toppings are fresh and crunchy. Mix a little of everything in each bite for the best flavor. If you are meal prepping, keep the toppings separate until you are ready to eat.

Notes

  • I always pick a good-quality cottage cheese with a short ingredient list, because it tastes cleaner and creamier.
  • I blend the cottage cheese for about 20 seconds when I want a smooth, yogurt-like base.
  • I pat my cucumber and tomatoes dry, which stops the savory bowl from turning watery.
  • I keep my granola in a separate container and add it at the last second to protect the crunch.
  • I season the savory bowl with a little salt and black pepper, and it instantly tastes more balanced.
