Cranberry White Chocolate Cookies Recipe

I made these cranberry white chocolate cookies on a lazy afternoon, and my kitchen smelled amazing within minutes. The edges turned golden and the centers stayed soft and chewy, just how I like them. Sweet white chocolate and tart cranberries make a perfect pair, and I loved every bite.
Total Time 20 minutes

Ingredients

  • 3 cups all-purpose flour – gives the cookies structure; spoon it into the cup don't pack it.
  • 1 teaspoon baking soda – helps the cookies rise and brown nicely.
  • ½ teaspoon baking powder – adds a little lift for a soft center.
  • 1 teaspoon salt – balances the sweetness and boosts flavor.
  • 1 cup butter softened – creams into a light dough; never use melted butter.
  • 1 cup granulated sugar – sweetens and crisps up the edges.
  • 1 cup light brown sugar packed – adds moisture and a chewy bite.
  • 2 large eggs – bind everything together; use room temperature eggs.
  • 2 teaspoons vanilla extract – adds warm flavor; pure vanilla tastes best.
  • 1½ cups white chocolate chips – bring creamy sweetness; save a few for the tops.
  • ⅔ cup dried cranberries – add a tart chewy contrast to the sweet chips

Method

  1. Heat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a baking mat. You can also grease it lightly if you prefer.
  2. In a medium bowl, whisk the flour, baking soda, baking powder, and salt. Whisking spreads the leavening evenly through the flour. This helps every cookie bake up the same way.
  3. In a large bowl, beat the softened butter with the granulated and brown sugars. Mix until the blend looks light and creamy. This step traps air and gives the cookies a soft texture.
  4. Beat in the eggs one at a time, then add the vanilla extract. Mix until the batter looks smooth and well blended. Scrape down the sides of the bowl once or twice.
  5. Add the flour mixture to the butter mixture in the large bowl. Mix on low speed until the flour just disappears. Stop right there so the cookies don't turn tough.
  6. Stir in the white chocolate chips and dried cranberries with a spatula. Spread them evenly so every cookie gets some of each. Keep a few chips aside for topping the dough.
  7. Use a large cookie scoop to make mounds of dough on the baking sheet. Leave about 2–3 inches between them so they have room to spread. Press a few extra white chocolate chips on top for a pretty finish.
  8. Bake for 9–11 minutes. Pull them out when the edges just start to brown. The centers may look a little soft, but they will set as they cool.
  9. Let the cookies rest on the hot pan for 5–10 minutes. Then move them to a wire rack to cool completely. Bake the remaining dough the same way, using a cooled pan each time.

Notes

  • I always use softened butter, not melted. Melted butter made my cookies spread flat and turn hard.
  • I press a few reserved white chocolate chips onto each dough ball before baking. They make the cookies look bakery-fresh.
  • For firmer, crispy white chocolate cranberry cookies, I scoop smaller mounds (about 1 heaping tablespoon). Then I bake them at 350°F for 10–11 minutes.
  • I let the cookies cool on the pan for a few minutes. This helps them set and keeps them from breaking when I lift them.
  • I follow the small-scoop trick for crispy cookies, and the edges turn lovely and golden.
  • I stick with white chocolate chips instead of regular chocolate chips. In my kitchen, they go best with the tart cranberries.
  • I mix the dough just until combined. Overmixing gave me denser cookies the first time I tried.
