Creamy Cajun Chicken and Rice Recipe

I made this creamy Cajun chicken and rice recipe on a random Tuesday when I wanted something comforting but didn't want to dirty five pots. It turned into one of those meals I now crave on repeat
Total Time 45 minutes
Servings: 4

Ingredients

  • ¼ cup unsalted butter divided – controls the salt level since the Cajun seasoning already brings plenty
  • 1 large red onion diced – builds a sweet, savory base for the rice
  • 2 teaspoons garlic minced (divided between rice and sauce) – adds warmth and depth to both layers
  • 1 ½ cups long-grain white rice uncooked – other varieties work too, just adjust liquid and time
  • 2 tablespoons Cajun seasoning divided – the heart of the dish's flavor, adjust up or down for heat preference
  • 3 cups chicken broth – cooks the rice while infusing it with savory flavor
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces – go boneless for quicker, even cooking
  • 2 tablespoons unsalted butter for the sauce – gives the sauce a silky base
  • 1 teaspoon Cajun seasoning for the sauce – layers in extra spice right where you taste it most
  • 1 cup heavy cream – the key to that rich restaurant-style sauce; don't swap for milk if you want it truly creamy
  • Fresh parsley chopped – brightens the dish visually and cuts through the richness

Method

  1. Melt 2 tablespoons of butter in a large pot over medium heat. Add the diced onion and cook for 3 to 4 minutes until it softens and turns translucent. Stir in the garlic and let it cook for just one more minute so it doesn't burn.
  2. Add the uncooked rice along with 1 tablespoon of Cajun seasoning directly into the pot. Stir everything together so each grain gets coated in that spiced butter. This little toasting step helps the rice hold onto more flavor as it cooks.
  3. Pour in the chicken broth and bring it up to a boil. Once bubbling, drop the heat to low, cover with a tight lid, and let it simmer undisturbed for 20 to 25 minutes. Resist lifting the lid, since trapped steam is what cooks the rice evenly.
  4. While the rice simmers, toss the chicken pieces with the remaining tablespoon of Cajun seasoning in a bowl. Melt the remaining butter in a large skillet over medium-high heat, then add the chicken. Cook for 8 to 10 minutes, flipping halfway, until golden and cooked through to 165°F.
  5. In that same skillet, melt more butter and add garlic, cooking for about a minute. Stir in Cajun seasoning and heavy cream, scraping up the browned bits left from the chicken. Simmer for 3 to 5 minutes until the sauce thickens slightly and turns glossy.
  6. Add the sauce and cooked chicken straight into the pot of finished rice. Stir gently until everything is coated and combined. Sprinkle fresh parsley over the top and serve it warm right away for the best texture.

Notes

  • I always toast the rice in the seasoned butter before adding broth it deepens the flavor so much more than just boiling plain rice.
  • I keep the lid on while the rice simmers no matter how tempted I am to check on it, because letting steam escape leaves me with undercooked grains.
  • I like to make a double batch of homemade Cajun seasoning so I always have extra on hand for the chicken, the rice, and the sauce.
  • I scrape every browned bit off the skillet when making the sauce, since that's where most of the flavor is hiding.
  • I taste the sauce before combining everything, because it's much easier to adjust the spice level at that stage than after it's mixed into the rice.
