Creamy Lemon Chicken Soup Recipe

I still remember the first chilly morning that made me crave soup, and this is the recipe I reached for. I wanted something warm, bright, and a little bit fancy without spending my whole evening in the kitchen.

Ingredients
  

  • 2 tbsp avocado oil coconut oil, or ghee – gives the aromatics a good base to soften in without burning
  • 1/2 medium onion chopped – builds the savory backbone of the broth
  • 1 cup carrots sliced – adds natural sweetness and color to every spoonful
  • 1 cup celery sliced – brings a mild crunch and classic soup flavor
  • 2-3 cloves garlic minced – use fresh cloves, not jarred, for a punchier aroma
  • 6 cups good-quality broth chicken, bone broth, or vegetable – the richer the broth, the better the final flavor
  • 1 bay leaf – infuses a subtle herbal depth while it simmers
  • 2 cups cooked chicken shredded or chopped – rotisserie chicken works perfectly here
  • 2 cups kale chopped (or spinach) – skip frozen greens, fresh wilts better and holds its texture
  • 3 large eggs – the secret to that creamy dairy-free texture
  • 1/4 cup fresh lemon juice – bottled juice won't give you the same bright zesty punch
  • Salt and pepper to taste – season gradually and taste as you go
  • Lemon slices and fresh herbs for garnish – parsley, dill, or basil all work beautifully

Method
 

  1. Warm your oil of choice in a large stockpot over medium heat. Toss in the chopped onion, carrots, and celery, stirring now and then until they start to soften, roughly 3 to 4 minutes. Add the minced garlic during the last minute so it doesn't scorch and turn bitter.
  2. Pour in the broth and drop in the bay leaf, then cover the pot and let everything come to a gentle simmer. Give it about 5 to 7 minutes so the vegetables continue softening. Once they're nearly tender, turn the heat down to low.
  3. Scoop out roughly 1 1/2 cups of the hot broth and set it aside for the next step. Stir the cooked chicken and chopped kale directly into the pot so they can warm through and wilt gently in the simmering liquid.
  4. In a separate bowl, whisk the eggs until they turn frothy and pale, about a minute of steady whisking. While still whisking, slowly stream in the reserved hot broth. This tempering step is what keeps your eggs silky instead of turning into scrambled bits.
  5. Once the eggs are tempered, whisk in the fresh lemon juice until fully combined. You should have a smooth, pale yellow mixture that smells incredibly fresh and citrusy at this point.
  6. Slowly pour the lemon-egg mixture back into the soup pot, stirring constantly as you go. Let it cook gently for another 3 to 5 minutes, but never let the pot come back to a full boil, or the eggs can curdle.
  7. Taste the soup and adjust with salt and pepper as needed. Ladle it into bowls, then top with thin lemon slices and a sprinkle of fresh herbs before serving it warm.

Notes

  • I always temper my eggs slowly, because rushing this step is the number one reason soup turns grainy on me.
  • I like using homemade bone broth when I have it on hand, since it gives me a richer, more gelatinous soup.
  • I squeeze my lemon juice fresh right before adding it, because pre-bottled juice tastes flat to me in this recipe.
  • I keep my heat on low once the eggs go in, because even a light boil ruins the creamy texture I'm going for.
