Creamy Pumpkin Soup Recipe

I still remember the first time I made this creamy pumpkin soup for my family on a chilly evening, and honestly, it disappeared before I even sat down to eat my own bowl. I wasn't planning on sharing my "secret" recipe, but after so many friends asked me for it, I figured it was time. This is hands-down the best pumpkin soup recipe I've ever made, and it's ridiculously simple too.
Prep Time 10 minutes
Cook Time 20 minutes
Servings: 4

Ingredients

  • 1.2 kg 2.4 lb pumpkin, peeled and cubed – the real star of the dish, so pick a sweet variety like kabocha or butternut for the best flavor
  • 1 onion sliced – builds the savory base and adds natural sweetness once softened
  • 2 garlic cloves peeled whole – infuses the broth with warmth without overpowering the pumpkin
  • 3 cups vegetable or chicken stock low sodium – lets you control the salt level and keeps the flavor balanced
  • 1 cup water – helps thin the soup to the right consistency before blending
  • ½ to ¾ cup cream or half and half – this is what makes the soup luxuriously creamy pumpkin soup, don't skip it
  • Salt and pepper to taste – always season at the end once the soup is blended for accuracy
  • Olive oil or butter 1 tablespoon – used to soften the onion and garlic before simmering

Method

  1. Start by peeling your pumpkin and cutting it into evenly sized cubes, about one inch each. Even sizing matters here because it helps everything cook at the same rate. I like using a butternut squash-style pumpkin since the skin peels off easily with a vegetable peeler.
  2. In your pot, heat the olive oil or butter over medium heat and add the sliced onion along with the whole garlic cloves. Cook for about five minutes until the onion turns soft and translucent, not browned. This step builds the flavor foundation for the whole soup.
  3. Add your pumpkin cubes, stock, and water into the pot with the softened onion and garlic. Bring it to a gentle boil, then reduce the heat to a simmer. Let it cook for around 15 minutes, or until the pumpkin is completely fork-tender.
  4. Carefully transfer the soup to a blender, or use an immersion blender directly in the pot. Blend until the mixture is completely smooth with no lumps. This is the step that turns a basic vegetable soup into that irresistibly creamy pumpkin soup texture.
  5. Pour the soup back into the pot if you used a blender, then stir in your cream over low heat. Season generously with salt and pepper, tasting as you go. Warm it through gently, but don't let it boil once the cream is added.
  6. Ladle the hot soup into bowls and add your favorite toppings right away while it's steaming. I always keep some crusty bread on the side because it's simply unmissable with this soup. This is the moment all that simmering pays off.

Notes

  • I always roast a portion of the pumpkin separately if I have extra time, since roasted pumpkin soup has a deeper, caramelized flavor that boiling alone can't match.
  • I never skip tasting before serving because pumpkin sweetness varies a lot batch to batch, so I adjust salt and pepper right at the end.
  • I like using an immersion blender directly in the pot since it saves me from transferring hot soup and cuts down on cleanup.
  • I sometimes swap in coconut milk instead of cream when I want a dairy-free version, and it adds a subtle richness that I genuinely love.
  • I always warm my bowls before serving because this soup cools down fast, and warm bowls keep it hotter for longer at the table.
