Creamy Spinach Roll Ups Recipe

I made these creamy spinach roll ups for a family gathering last weekend, and they were an instant hit. The rich, cheesy filling combined with the flaky puff pastry was the perfect balance of indulgence and lightness.

Ingredients
  

  • Puff pastry sheets 2 sheets, thawed: These are the perfect base for your roll ups, giving them a golden, flaky texture.
  • Fresh spinach 3 cups, chopped: Always go for fresh spinach instead of frozen for that vibrant taste and texture.
  • Cream cheese 8 oz, softened: This creamy ingredient is the heart of your filling. Make sure it’s softened to blend easily.
  • Shredded mozzarella cheese 1 cup: Grate it fresh for the best melting quality and flavor.
  • Grated Parmesan cheese ½ cup: Adds a nutty, salty kick to the filling.
  • Garlic powder 1 teaspoon: Enhances the overall flavor while adding a subtle warmth.
  • Salt and pepper to taste: Adjust to your preference to balance the filling.
  • Egg 1, for egg wash: Helps to seal the edges and gives the pastry a golden finish.

Method
 

  1. Start by making the filling so it’s ready to go when you assemble the roll ups. Combine the cream cheese, mozzarella, Parmesan, garlic powder, and a pinch of salt and pepper in a large mixing bowl.
  2. Mix well until you achieve a creamy, uniform consistency. Next, fold in the chopped fresh spinach to evenly distribute it throughout the cheesy filling.
  3. Flour your work surface lightly and roll out the thawed puff pastry sheets.
  4. This step ensures they’re thin yet sturdy enough for rolling. Aim for about 10x12 inches per sheet. Try to keep their thickness even, as this helps the pastries bake uniformly.
  5. Spread the creamy spinach filling evenly over the rolled-out puff pastry sheets, leaving a slight border along the edges. Starting from one end, gently roll the pastry into a tight log.
  6. Press the seam down lightly to seal it, then cut the log into 1-inch sections using a sharp knife or pizza cutter.
  7. Line your baking tray with parchment paper to prevent sticking, then carefully place the roll ups onto the tray. Brush each one with a light coating of egg wash for that beautiful golden finish.
  8. Preheat your oven to 375°F (190°C), then bake the roll ups for 15-20 minutes, or until the tops are golden and puffed up. Serve warm for the best flavor and texture!

  • Chill the pastry before baking if it gets too soft during assembly.
