Creamy Spinach Tomato Pasta Recipe

I stumbled onto this recipe on one of those evenings when I had zero energy but a very loud stomach. I raided my pantry, found a can of tomatoes, a block of cream cheese, and a sad little bag of spinach, and decided to wing it.

Ingredients
  

  • 8 oz 230 g penne pasta – short pasta shapes like penne or rotini hold the creamy sauce beautifully in every bite
  • 1 small yellow onion diced – gives the sauce a sweet, savory base once it softens
  • 2 garlic cloves minced – fresh garlic makes a huge flavor difference over the jarred stuff
  • 1 tablespoon olive oil – use a good quality one since it's the base fat for sautéing
  • 1 can 14.5 oz/400 g diced tomatoes – keep the juices in the can, they help build the sauce
  • ½ teaspoon dried oregano – adds a warm herby backbone to the sauce
  • ½ teaspoon dried basil – pairs perfectly with oregano for that classic Italian flavor
  • teaspoon crushed red pepper – just enough for a gentle background heat skip it if you're sensitive to spice
  • ½ teaspoon salt – season early so the flavors build properly
  • ½ teaspoon freshly cracked black pepper – freshly cracked has way more punch than pre-ground
  • 2 tablespoons tomato paste – concentrates the tomato flavor and thickens the sauce
  • ½ cup water – helps loosen the tomato paste into the sauce smoothly
  • 2 oz 60 g cream cheese – melts into the sauce for that rich, velvety texture
  • ¼ cup 25 g grated Parmesan – grate it fresh if you can, it melts smoother than the pre-shredded kind
  • 4 oz 120 g fresh spinach – go fresh here instead of frozen since it wilts cleanly without watering down the sauce

Method
 

  1. I bring a big pot of salted water to a rolling boil first, since this takes the longest. Once it's bubbling, I drop in the pasta and let it cook until just tender, usually around 7 to 9 minutes. I drain it in a colander and set it aside while I finish the sauce.
  2. While the pasta boils, I heat olive oil in a large skillet over medium heat. I toss in the diced onion and minced garlic and let them cook for 3 to 5 minutes until soft and fragrant. This step builds the flavor foundation for the entire sauce.
  3. Next, I stir in the diced tomatoes with their juices, along with the oregano, basil, crushed red pepper, salt, and black pepper. Then I add the tomato paste and water, stirring until everything blends into a smooth, rich tomato base.
  4. I turn the heat down to low so the sauce doesn't scorch. I cut the cream cheese into small chunks and whisk it in a little at a time. It looks lumpy at first, but keep whisking and it turns silky within a minute or two.
  5. Once the cream cheese has fully melted, I sprinkle in the grated Parmesan and stir until it disappears into the sauce. This is where the sauce really turns thick, glossy, and irresistible.
  6. I add the fresh spinach directly into the skillet and gently fold it through the warm sauce. It only takes 2 to 3 minutes to wilt down completely, so I keep an eye on it and don't overcook it.
  7. Finally, I add the drained pasta straight into the skillet and toss everything together until every piece is coated in that creamy tomato sauce. I taste it, adjust the salt if needed, and serve it warm right away.

Notes

  • I always save a splash of pasta water before draining, just in case the sauce needs loosening later.
  • I like grating my own Parmesan because pre-shredded versions don't melt nearly as smoothly.
  • Cutting the cream cheese into small cubes before adding it helps it melt faster and more evenly for me.
  • I've started adding a pinch more crushed red pepper when I want a bit more kick without overpowering the dish.
  • I never skip fresh garlic, since it makes such a noticeable difference in the final flavor for me.
