Crispy Fried Mac and Cheese Bites Recipe

I never thought I could love mac and cheese more until I tried frying it. I made a batch of these bites for a family get-together, and they disappeared within minutes. The outside turns golden and crackly while the inside stays gooey and rich

Ingredients
  

  • 2 cups elbow macaroni cooked and drained (short pasta shapes like ziti or fusilli also work well)
  • 2 tablespoons unsalted butter or bacon grease for a smokier flavor
  • 2 tablespoons all-purpose flour for the roux
  • 1 cup whole milk for the creamiest texture
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • teaspoon cayenne pepper for a subtle kick
  • teaspoon ground nutmeg to round out the flavor
  • 2 cups sharp cheddar cheese freshly shredded (pre-shredded cheese has anti-caking coatings that keep sauce grainy)
  • 2 cups Monterey Jack cheese freshly shredded
  • 1 cup cooked bacon chopped (optional, but adds a great smoky flavor)
  • 1 cup all-purpose flour for coating
  • 2 large eggs beaten
  • 2 cups seasoned panko breadcrumbs regular breadcrumbs soak up more oil and turn out denser
  • Vegetable oil for frying

Method
 

  1. Bring a large pot of salted water to a boil and add your macaroni. Cook it until just tender, then drain and rinse with cold water. This keeps the noodles from getting mushy once they are mixed into the cheese sauce later.
  2. Melt the butter in a saucepan and whisk in the flour to form a roux. Slowly pour in the milk while whisking, then season with salt, pepper, garlic powder, cayenne, and nutmeg. Let it simmer until it starts to thicken slightly.
  3. Remove the sauce from the heat and stir in the shredded cheese until fully melted. Fold in the cooked macaroni and chopped bacon until everything is coated evenly. The mixture should look thick and creamy, not runny.
  4. Spread the mac and cheese into a lined baking dish, pressing it into an even layer. Cover it tightly and refrigerate for at least three hours, or overnight if you have the time. This step is what allows you to cut clean, sturdy pieces later.
  5. Once the mixture is firm, turn it out onto a cutting board and slice it into small squares. You can also use a scoop to form rounder balls with your hands if you prefer that shape.
  6. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dip each piece into the flour, then the egg, then the breadcrumbs, making sure it is fully coated each time.
  7. Place the breaded bites on a tray and pop them in the freezer while your oil heats up. This short freeze helps them hold their shape and keeps the cheese from leaking out during frying.
  8. Heat oil in a deep pot to around 365°F. Fry the bites in small batches for four to five minutes, until deep golden brown. Drain them on paper towels before serving.

Notes

  • I always shred my own cheese instead of buying pre-shredded bags, since it melts so much smoother into the sauce.
  • I like to double-check my oil temperature with a thermometer, since bites can turn greasy if the oil is too cool.
  • I never skip the freezer step before frying, because it keeps the cheese from oozing out into the oil.
  • I fry in small batches so the oil temperature does not drop too much, which keeps the coating crisp.
  • I always taste my cheese sauce before chilling it, so I can adjust the seasoning while it is still easy to fix.
