Crispy Lemon Parmesan Chicken Tenders Recipe

I still remember the first time I pulled these out of the oven and my kitchen smelled like a garlicky lemon dream. I made a batch of crispy lemon Parmesan chicken tenders on a random Tuesday, mostly because I had chicken breasts to use up, and I ended up making them again three days later.

Ingredients
  

  • 1 cup buttermilk – tenderizes the chicken and helps the seasoning stick
  • 1 tablespoon plus 1 1/4 teaspoons lemon pepper seasoning with salt divided – the backbone flavor for both the chicken and the sauce
  • 1 teaspoon finely grated lemon zest – gives a fresh citrus punch that juice alone can't provide
  • 1 tablespoon freshly squeezed lemon juice – use fresh not bottled, for real brightness
  • 1 teaspoon garlic powder – adds savory depth to the marinade
  • 1 1/2 teaspoons smoked paprika divided – brings gentle smokiness and a nice golden color
  • 2 pounds boneless skinless chicken breasts – cut into even strips so they cook at the same rate
  • Cooking spray – helps the coating crisp up without deep frying
  • 2 cups panko breadcrumbs – the key to that shatter-crisp texture don't swap for regular breadcrumbs
  • 1/2 cup grated Parmesan cheese – grate it fresh for the best flavor and browning
  • 1/2 teaspoon dried thyme – adds a subtle herby note to the crust
  • 8 tablespoons unsalted butter cut into pieces – the base of that irresistible dipping sauce
  • 2 cloves garlic minced – fresh garlic makes the sauce so much more fragrant
  • 1 1/2 teaspoons lemon pepper seasoning – ties the sauce flavor back to the chicken
  • 1/4 teaspoon red pepper flakes optional – adds a gentle kick if you like a little heat

Method
 

  1. I start by whisking the buttermilk, lemon pepper seasoning, lemon zest, lemon juice, garlic powder, and a bit of the smoked paprika together in a large bowl. Then I pat my chicken breasts dry and slice them into even strips so nothing cooks unevenly. I toss the chicken right into that marinade, cover it, and let it sit for at least 30 minutes on the counter, or up to two hours in the fridge if I'm prepping ahead.
  2. While the chicken marinates, I heat my oven to 425°F, or my air fryer to 400°F if I'm using that instead. I line a baking sheet with foil and give it a light coat of cooking spray so nothing sticks. In a shallow dish, I mix the panko, Parmesan, remaining lemon pepper seasoning, thyme, and the rest of the smoked paprika until it's evenly combined.
  3. This is the messiest but most satisfying part for me. I pull each chicken strip from the marinade, let the excess drip off, then press it firmly into the panko mixture on all sides. I really push down so the coating clings well, then set each piece on my prepared baking sheet with a little space between them.
  4. If I'm baking, I pop the tray in for about 20 minutes, flip each tender, then bake another 10 to 15 minutes until they're deeply golden and cooked through. In the air fryer, I arrange them in a single layer, cooking in batches if needed, and air fry for 10 to 12 minutes total, flipping halfway. Either way, I always check that the internal temperature hits 165°F.
  5. While the chicken finishes cooking, I melt the butter in a small saucepan with minced garlic, lemon pepper seasoning, and red pepper flakes if I'm in the mood for heat. I let it simmer gently just until fragrant, then pour it into a small serving bowl. I either serve it on the side for dipping or brush it directly over the hot tenders right before serving.

Notes

  • I always pat the chicken completely dry before marinating so the buttermilk mixture actually clings instead of sliding off.
  • I press the panko mixture onto the chicken firmly rather than just rolling it, since pressing gives me a much thicker, crunchier crust.
  • I never skip flipping halfway through baking, because that's what gives me that even golden color on both sides.
  • I like to let the breaded tenders rest on the baking sheet for a minute or two before serving so the coating sets and stays crispy.
  • I keep extra lemon wedges nearby, since a fresh squeeze right before eating wakes up all the citrus flavor again.
