Crock Pot Chicken Rice Soup Recipe

I still remember the first time I let my slow cooker do all the work on a soup instead of babysitting a pot on the stove. I honestly wasn't sure it would turn out right. But a few hours later, my kitchen smelled like a warm hug, and the soup that came out of that crock was thicker, richer, and more comforting than anything I'd made in a hurry.

Ingredients
  

  • 2 teaspoons olive oil – helps soften the veggies and builds the soup's flavor base
  • 4 medium carrots diced – adds natural sweetness and color to every bowl
  • 3 celery stalks diced – brings that classic soup crunch and earthy flavor
  • ½ medium yellow onion diced – the aromatic backbone of the broth
  • 2 garlic cloves minced – deepens the savory notes, don't skip it
  • 1 teaspoon salt – balances and lifts every other flavor in the pot
  • ½ teaspoon black pepper – adds a gentle warmth without overpowering
  • 1 cup brown rice rinsed – stick with brown rice here; white rice turns mushy in the slow cooker
  • pounds boneless skinless chicken breasts or thighs – the protein star, cooks tender and shreds easily
  • 6 –8 cups chicken stock – use real stock not broth, for a richer, silkier soup
  • 1 bay leaf – infuses a subtle herbal depth while it simmers
  • 6 sprigs fresh thyme – fresh is worth it here; dried can taste too sharp
  • 2 tablespoons fresh lemon juice – the finishing touch that brightens the whole bowl

Method
 

  1. I start by warming the olive oil in a skillet over medium heat, then toss in the carrots, celery, and onion. I let them cook for about 8 to 10 minutes until they start to soften and smell fragrant. Right at the end, I stir in the garlic, salt, and pepper for just half a minute more.
  2. Once the veggies are ready, I spread them across the bottom of a lightly greased slow cooker. Next goes the rinsed brown rice, followed by the chicken breasts arranged on top. I pour in the chicken stock and tuck in the bay leaf along with the fresh thyme sprigs.
  3. I cover the slow cooker and set it to low for 5 to 6 hours, or high for about 2.5 to 3.5 hours. I always check the chicken a bit early since it can dry out if it overcooks. Once it hits 165°F internally, I pull it out so it doesn't get tough while the rice keeps cooking.
  4. After removing the bay leaf and thyme stems, I place the chicken on a cutting board and let it cool for a few minutes. Using two forks, I shred it into bite-sized pieces, then return all of it straight back into the pot with the rice and vegetables.
  5. The last step is my favorite. I squeeze in the fresh lemon juice and give everything a good stir. If the soup feels too thick, I add a splash of more stock. A quick taste test lets me adjust the salt and pepper before serving it warm.

Notes

  • I always rinse my brown rice before adding it to keep the starch from making the broth cloudy.
  • I check my chicken early instead of trusting the timer completely, since every slow cooker runs a little differently.
  • I hold off on the lemon juice until the very end, because cooking it too long dulls its brightness.
  • I keep a little extra stock on hand for reheating, since the rice keeps soaking up liquid even after cooking.
  • I use fresh thyme whenever I can swing it. The flavor is noticeably better than dried.
