Crockpot French Onion Chicken Recipe

If there’s one dinner recipe I keep coming back to, it’s Crockpot French Onion Chicken. I remember the first time I made it—I couldn't believe how simple it was!

Ingredients
  

  • 3 to 4 boneless skinless chicken breasts
  • Pro Tip: Use fresh chicken for the best texture. Frozen chicken can retain water which might dilute the flavor.
  • 1 10.5 oz can of cream of chicken soup
  • For a richer flavor use unsalted cream of chicken soup, allowing you to control the salt content.
  • 2 1 oz packets of French onion soup mix
  • This provides that signature onion flavor and a hint of herbs. Be careful not to add too much extra salt as the soup mix is already seasoned.
  • ½ cup chicken broth or water, optional
  • Use low-sodium broth to prevent overpowering the dish. Add only if you prefer a thinner gravy.

Method
 

  1. Place the chicken breasts at the bottom of the slow cooker. If you like, season them lightly with salt, pepper, and garlic powder to add more flavor directly into the chicken.
  2. Whisk together the cream of chicken soup, French onion soup mix, and chicken broth (if using). Make sure everything is well-blended to avoid clumps.
  3. Pour the soup mixture over the chicken breasts, covering them evenly. Put the lid on the slow cooker and set it to LOW. Cook for 4-6 hours, or until the chicken is tender and easy to shred.
  4. About 30 minutes before the end of the cooking time, use two forks to shred the chicken directly in the pot. Stir it into the gravy so it absorbs more flavor.
  5. Once done, serve the chicken and gravy over your favorite base like rice, mashed potatoes, or noodles. Garnish with freshly chopped parsley for a pop of color!

Notes

  • Add minced garlic to the soup mixture for a subtle earthy taste.
  • For more onion flavor, throw in sliced caramelized onions before cooking.
  • If you love a creamier texture, stir in a dollop of sour cream before serving.
  • Prefer crispy chicken? Briefly pan-sear the breasts before placing them in the slow cooker.
  • Keep the lid on as much as possible during cooking to retain heat and ensure even cooking.
