Place the chicken breasts at the bottom of the slow cooker. If you like, season them lightly with salt, pepper, and garlic powder to add more flavor directly into the chicken.
Whisk together the cream of chicken soup, French onion soup mix, and chicken broth (if using). Make sure everything is well-blended to avoid clumps.
Pour the soup mixture over the chicken breasts, covering them evenly. Put the lid on the slow cooker and set it to LOW. Cook for 4-6 hours, or until the chicken is tender and easy to shred.
About 30 minutes before the end of the cooking time, use two forks to shred the chicken directly in the pot. Stir it into the gravy so it absorbs more flavor.
Once done, serve the chicken and gravy over your favorite base like rice, mashed potatoes, or noodles. Garnish with freshly chopped parsley for a pop of color!
