Easy 5 Minute Breakfast Recipe

I used to be a serial breakfast-skipper. Between snoozing my alarm twice and rushing to find matching socks, breakfast is always lost. Then one chaotic Tuesday I threw eggs, cheese, and whatever was in my fridge into a bowl, and five minutes later I had something that actually kept me full until lunch

Ingredients
  

  • 2 large eggs – the protein base that keeps this breakfast satisfying for hours
  • 2 tablespoons milk – makes the eggs fluffy instead of rubbery in the microwave
  • 1/4 cup shredded cheddar cheese – grate it fresh if you can it melts smoother than the bagged kind
  • 1/4 ripe avocado sliced – adds creaminess and healthy fats without any cooking
  • 1/4 cup cherry tomatoes halved – a juicy, slightly sweet contrast to the eggs
  • 1/2 cup baby spinach roughly chopped – wilts instantly in the warm eggs, no extra step needed
  • 1 tablespoon plain Greek yogurt – swap in for sour cream it's tangier and higher in protein
  • Pinch of salt and black pepper – season right before microwaving not after
  • Pinch of chili flakes or everything bagel seasoning – totally optional but it wakes the whole bowl up

Method
 

  1. Crack your eggs into the microwave-safe mug, add the milk, and season with a pinch of salt and pepper. Whisk briskly with a fork for about 15 seconds until the mixture looks pale yellow and slightly frothy. This little bit of air is what keeps the texture light instead of dense.
  2. Microwave the eggs for 45 seconds, pull the mug out, and give it a quick stir with the fork. Pop it back in for another 30 to 45 seconds. Stirring halfway through stops the edges from turning rubbery while the center is still runny, which is the most common microwave-egg mistake.
  3. While the eggs are in the microwave, slice your avocado, halve the cherry tomatoes, and roughly chop the spinach. This whole step takes under a minute if your ingredients are already washed, which is exactly why a little Sunday prep pays off on a Tuesday morning.
  4. Tip the warm scrambled eggs into your serving bowl. Sprinkle the shredded cheese straight on top so it melts from the residual heat, then scatter the spinach around it so it wilts slightly. Arrange the avocado slices and tomato halves on top.
  5. Add a small dollop of Greek yogurt to one side of the bowl, and finish with a pinch of chili flakes or everything bagel seasoning if you're using it. Serve immediately while everything is still warm

Notes

  • I always add the milk before microwaving, not after it's the difference between fluffy eggs and a flat, dense scramble.
  • I keep a container of pre-washed spinach and halved cherry tomatoes in my fridge every week, so this really does take 5 minutes.
  • I grate my own cheese instead of using the bagged shredded kind, since it melts far smoother and doesn't taste powdery.
  • I stir the eggs halfway through microwaving without fail, because skipping that step is how you end up with a rubbery edge and a raw center.
  • I let the eggs sit for 30 seconds after microwaving before assembling, which helps them finish cooking gently without turning tough.
