Easy Breakfast Quesadilla Recipe

I make these breakfast quesadillas at least once a week, and I still get excited every time that cheese hits the hot pan and starts to sizzle. I first started throwing eggs and bacon into a folded tortilla on lazy weekend mornings, and now it's become my go-to whenever I want something warm, filling, and fast without turning on the oven

Ingredients
  

  • 4 slices bacon chopped – go for thick-cut if you can, it holds its crisp better once folded into the tortilla
  • 6 large eggs – the star of the filling whisk them well so they scramble up soft and fluffy
  • 2 tablespoons milk – makes the eggs a touch creamier as they cook
  • 1/4 cup diced onion – adds a mild sweetness once it softens in the pan
  • 1/4 cup diced tomato – use a firm one so it doesn't turn your filling watery
  • 1 small jalapeño diced (optional) – for a gentle kick, seed it if you want less heat
  • 2 teaspoons olive oil or butter – for sautéing the vegetables
  • Salt and black pepper to taste – season the eggs right after whisking, not after they're cooked
  • 1 cup shredded cheese cheddar or Mexican blend – shred it fresh off the block for the best melt
  • 4 flour tortillas 8-inch – warm them slightly first so they fold without cracking
  • 1 tablespoon butter for the pan – gives the tortilla that golden, crispy finish

Method
 

  1. Toss your chopped bacon into a large skillet over medium-high heat and let it cook for about 4 to 5 minutes, stirring occasionally, until it's crisp and browned. Move it to a plate lined with paper towels so the extra grease drains off. I usually leave a little bacon fat in the pan since it adds so much flavor to the vegetables that go in next.
  2. In the same skillet, warm your olive oil (or leftover bacon grease) over medium heat and add the onion, tomato, and jalapeño. Cook for about 4 to 5 minutes, stirring now and then, until everything softens and smells fragrant. This step builds the flavor base for the whole filling, so don't rush past it.
  3. While your veggies cook, whisk the eggs with milk, salt, and pepper in a bowl until fully combined. Pour the mixture into the skillet with the vegetables and cook over medium-low heat, stirring gently, until the eggs are just set but still soft. Pulling them off the heat a touch early keeps them from turning rubbery.
  4. Stir the crispy bacon back into the egg and veggie mixture, then remove the skillet from the heat. Give everything a light toss so the filling is evenly combined. This is the moment where all those separate components turn into one cohesive, savory mix ready for the tortilla.
  5. Lay a tortilla flat and sprinkle cheese over one half, then spoon a portion of the egg filling on top of the cheese, and finish with another light layer of cheese. Fold the tortilla in half, pressing gently so the filling stays put. Repeat with the remaining tortillas and filling.
  6. Melt a little butter in the skillet over medium heat and place the folded quesadilla in the pan. Cook for about 2 to 3 minutes per side, pressing down lightly with your spatula, until both sides are golden brown and the cheese has fully melted. Slice into wedges and serve while it's hot.

Notes

  • I always shred my own cheese instead of buying pre-shredded. It melts so much smoother and clings to the eggs better.
  • I warm my tortillas for a few seconds in a dry pan before filling them, which keeps them from tearing when I fold them.
  • I let the bacon and egg filling cool for a minute before assembling, otherwise the tortilla gets soggy from the steam.
  • I keep the heat at medium instead of high when crisping the quesadilla, so the outside doesn't burn before the cheese melts inside.
  • I press down gently with my spatula while it cooks, which helps the whole thing hold together and get that even, crispy crust.
