Easy Cottage Cheese Dip Recipe

I made this easy cottage cheese dip on a lazy afternoon when I wanted something creamy but light. I blended it in under five minutes, and I was shocked at how rich it tasted. The fresh dill and lemon made it bright, and the garlic added a gentle kick. I scooped it up with crunchy veggies first, then crackers, and then straight from the bowl.
Total Time 5 minutes

Ingredients

  • 2 cups 16 oz full-fat or 2% cottage cheese: the creamy, protein-rich base, so drain any extra liquid first.
  • 1 tablespoon fresh lemon juice: adds brightness so squeeze it fresh instead of using bottled.
  • 1 small garlic clove minced: gives gentle savory flavor, so mince it very fine.
  • 2 tablespoons fresh dill chopped: brings a fresh, herby taste that dried dill can't match.
  • 1 tablespoon fresh chives finely chopped: adds a mild onion note and pretty green flecks.
  • 1 tablespoon extra virgin olive oil: makes the texture silky so pick a fruity one.
  • 1/4 teaspoon fine sea salt: lifts every flavor so add it slowly and taste.
  • 1/8 teaspoon freshly ground black pepper: adds a little warmth and fresh grinding tastes best.
  • Pinch of paprika for topping: gives a pop of color and a mild smoky touch.

Method

  1. Tip the cottage cheese into a fine mesh strainer over the sink. Let it sit for two or three minutes. I gently press it with a spoon to release extra whey, because wet cottage cheese makes a runny dip.
  2. Mince the garlic as finely as you can. Chop the dill and chives into small, even pieces. Roll the lemon on the counter first, then juice it, since this gets more juice out.
  3. Add the drained cottage cheese, lemon juice, garlic, olive oil, salt, and pepper to your food processor. Blend for 45 to 60 seconds, scraping down the sides once. Stop when it looks smooth and thick, like a soft sour cream.
  4. No blender? No problem. Mash the cottage cheese with a fork in a bowl, then whisk hard for two minutes. The dip will be a little rustic and textured, and honestly I love it that way.
  5. Stir the dill and chives into the creamy base by hand. Blending them keeps the dip a pale green, while folding keeps them bright and visible. I prefer folding because it looks more fresh.
  6. Take a small taste with a cracker or a carrot stick. Add a tiny pinch of salt or an extra squeeze of lemon if needed. Small changes make a big difference here.
  7. Spoon the dip into a serving bowl and swirl the top with the back of a spoon. Add a drizzle of olive oil and a dusting of paprika. Chill for 30 minutes if you can, because the flavors blend and the dip tastes better.

Notes

  • I always choose full-fat or 2% cottage cheese, because fat-free versions turn out chalky for me.
  • I blend the cottage cheese first and add the herbs later, so the dip stays bright and pretty.
  • I let the dip rest in the fridge for 30 minutes, and the garlic mellows out nicely.
  • I add a spoonful of Greek yogurt when I want a tangier, extra thick dip.
  • I use a small rubber spatula to scrape the bowl, so I don't waste a single spoonful.
  • I taste with the actual dippers I plan to serve, since salty crackers need a less salty dip.
  • I take the dip out of the fridge five minutes before serving, which makes it softer and easier to scoop.
