Easy Ginger Soy Cod Recipe

After trying it, I realized this dish is perfect for busy weeknights when I want a healthy meal without spending hours in the kitchen

Ingredients
  

  • 2 cod fillets about 6 oz each – Choose thick, fresh fillets with glossy flesh for the best texture and flavor.
  • 2 tablespoons soy sauce – Forms the savory base of the marinade and adds depth to the dish.
  • 1 tablespoon fresh ginger grated – Fresh ginger gives a vibrant, slightly spicy flavor that powdered ginger cannot replicate.
  • 1 clove garlic minced – Adds aromatic richness that enhances the sauce.
  • 1 tablespoon honey – Balances the salty soy sauce with a subtle sweetness.
  • 1 tablespoon rice vinegar – Adds a gentle tang that brightens the entire dish.
  • 1 tablespoon sesame oil – Used for cooking and provides a nutty aroma.
  • 1 tablespoon chopped green onions – A fresh garnish that adds color and mild onion flavor.
  • 1 teaspoon sesame seeds – A simple finishing touch that adds crunch and visual appeal.

Method
 

  1. Start by combining soy sauce, grated ginger, minced garlic, honey, and rice vinegar in a small bowl. Whisk everything together until the mixture is smooth and well blended. The combination creates a sweet, salty, and slightly tangy sauce that perfectly complements the mild cod.
  2. Place the cod fillets in a shallow dish and pour the prepared marinade over them. Turn the fish gently to coat both sides evenly. Allow the fillets to marinate for about 15 minutes so the flavors absorb into the fish.
  3. Warm sesame oil in a non-stick skillet over medium heat until it begins to shimmer. The oil adds a delicious nutty aroma and prevents the fish from sticking. Make sure the pan is hot enough before adding the cod for the best sear.
  4. Remove the fillets from the marinade and place them carefully into the hot skillet. Cook each side for about 3–4 minutes until the fish turns golden and flakes easily with a fork. During the final minute, spoon some of the remaining marinade over the fish to create a glossy glaze.
  5. Once the cod is cooked through, transfer it to a serving plate. Sprinkle chopped green onions and sesame seeds over the top for extra texture and freshness. Serve immediately while the fish is warm and flaky.

Notes

  • I always pat the cod dry with paper towels before marinating so the sauce sticks better.
  • I make sure not to overcook the fish because cod cooks very quickly and can dry out easily.
  • I prefer freshly grated ginger instead of ginger paste because it gives the sauce a brighter flavor.
  • I sometimes add a little extra honey when I want the glaze to be slightly sweeter.
  • I like to baste the cod with leftover marinade during the final minute for extra shine and flavor.
