Easy Halloween Fruit Dip Recipe

I made this monster dip last weekend, and it vanished faster than anything else on the table. It took me about five minutes of mixing, and the bowl looked like a tiny swamp full of googly eyes. My family kept sneaking strawberries into it before I even set it down.

Ingredients
  

  • 8 oz cream cheese softened: gives the dip its creamy, tangy base, so use full-fat for the best texture.
  • 7 oz marshmallow fluff: adds the sweet airy, cloud-like body, and mini marshmallows won't work here.
  • ½ tsp salt optional: balances the sweetness, but you can halve it or skip it.
  • 4 –5 drops green food coloring: turns the dip into a monster-green swamp so add more for a deeper shade.
  • ½ cup M&M's optional: adds color pops and crunch, so fold them in at the end.
  • Candy eyeballs mini, medium, and jumbo: bring the monster faces to life, so add them right before serving.

Method
 

  1. Leave the cream cheese on the counter until it feels soft when pressed. Cold cream cheese leaves lumps that never fully blend out. I usually set it out about 30 minutes before I start.
  2. Add the softened cream cheese to a large bowl. Beat it on medium speed for one to two minutes until it looks silky. If it came straight from the fridge, it may need a little longer.
  3. Spoon in the marshmallow fluff, then add the salt and green food coloring. Beat again on medium speed until everything looks even and smooth. Taste it and add a drop or two more color if you want a bolder green.
  4. If you are using M&M's, stir them in by hand with a spatula. Do not use the mixer here, or the candy coating will bleed and turn your dip a muddy brown. Gentle folding keeps the colors bright.
  5. Move the dip to a serving bowl and cover it. Refrigerate for at least 20 minutes so it firms up. A longer chill is fine if you are prepping ahead.
  6. Wait until just before serving to press the eyeballs into the top. If you add them too early, they can slip or get soggy. Mix big and small eyes so the dip looks like a funny monster family.
  7. Set out the bowl with a pile of dippers around it. Strawberries, pretzels, and graham crackers are always the first to go. Let the dip sit out about 15 minutes if it feels too firm to scoop

Notes

  • I always soften the cream cheese fully, because even tiny lumps show up in a pastel-green dip.
  • I use full-fat cream cheese since it gives a richer, creamier bite than the reduced-fat kind.
  • I start with four drops of green coloring and add more slowly, because it is easy to overdo it.
  • I let the chilled dip sit on the counter for about 15 minutes, which makes it so much easier to scoop.
  • I keep the eyeballs in a small bowl until the last minute so they stay neat and pretty.
  • I taste a tiny bit before chilling, since the pinch of salt really does make the sweetness feel balanced.
