Easy Italian Grinder Tortellini Salad Recipe

I recently made this Easy Italian Grinder Tortellini Salad, and it instantly became one of my favorite quick meals. It tastes just like a loaded Italian grinder sandwich but in pasta salad form. I love how creamy, tangy, and hearty it turned out with every bite

Ingredients
  

  • I start by boiling a large pot of salted water and cooking the tortellini until tender. It usually takes just a few minutes so I keep an eye on it closely. Once done, I drain and rinse it under cool water to stop cooking.
  • Next I chop all the deli meats, cheese, and vegetables into bite-sized pieces. This step makes sure every bite has a perfect balance of flavors. I keep everything ready before mixing to save time later.
  • In a bowl I whisk together mayo, olive oil, vinegar, and seasonings. I make sure it’s smooth and creamy with a slight tang. This dressing is what gives the salad its signature grinder flavor.
  • I gently toss tortellini meats, veggies, and dressing in a large bowl. I mix until everything is well coated and evenly distributed. Then I chill it for at least 30 minutes before serving for the best flavor.
