Easy Pumpkin Pasta Recipe

I made this pumpkin pasta on a random Tuesday when I wanted something cozy but didn't feel like standing over the stove for an hour, and it's been on repeat in my kitchen ever since. I love how the pumpkin sauce turns silky and rich the second it hits the hot pasta, no fuss required.

Ingredients
  

  • 12 oz pasta rigatoni, penne, or cavatappi – short, ridged shapes hold onto the creamy sauce best
  • 2 tablespoons olive oil – helps soften the aromatics without them sticking
  • 1 small onion diced – builds a sweet, savory base for the sauce
  • 3 cloves garlic minced – use fresh cloves, jarred garlic loses a lot of its punch
  • 15 oz canned pumpkin puree – double-check the label; you want puree not spiced pie filling
  • 1 cup vegetable broth – thins the sauce to the right consistency without watering down flavor
  • ½ cup heavy cream – this is what makes the sauce feel indulgent and smooth
  • ½ cup Parmesan cheese grated, plus extra for serving – grate it fresh, pre-shredded cheese doesn't melt as well
  • ¼ teaspoon ground nutmeg – a small pinch wakes up the pumpkin's natural sweetness
  • Salt and black pepper to taste – season in layers, not all at once
  • ½ cup panko breadcrumbs – toasted with butter and garlic for a crunchy topping
  • 2 tablespoons butter – for toasting the breadcrumbs until golden

Method
 

  1. Bring a large pot of salted water to a rolling boil and add your pasta. Cook it according to the package directions until it's al dente, since it will finish cooking briefly in the sauce later. Before draining, scoop out about a cup of the starchy pasta water and set it aside, it's a great tool for loosening the sauce later.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and cook until it turns soft and translucent, about 4 to 5 minutes. Stir in the minced garlic and cook for another minute, just until fragrant, being careful not to let it brown or turn bitter.
  3. Add the pumpkin puree and vegetable broth to the skillet, stirring until everything is smoothly combined. Let it simmer gently for a couple of minutes so the flavors meld together. Stir in the heavy cream, nutmeg, salt, and pepper, and keep the heat low so the cream doesn't split.
  4. Add the drained pasta directly into the skillet with the pumpkin sauce, tossing everything together until each piece is coated. Stir in the grated Parmesan cheese and let it melt into the sauce. If the mixture looks too thick, splash in a little reserved pasta water until it's glossy and pourable.
  5. In a small skillet, melt the butter over medium heat and add the panko breadcrumbs. Toast them, stirring frequently, until they turn golden brown and smell nutty, which usually takes about 3 minutes. Keep a close eye on them since breadcrumbs can burn quickly once they start browning.
  6. Plate the pasta while it's warm and generously sprinkle the toasted garlic breadcrumbs over the top. Finish with extra Parmesan cheese and a crack of black pepper for good measure. Serve immediately so the breadcrumbs stay crisp against the creamy sauce.

Notes

  • I always save extra pasta water because it's the easiest way to fix a sauce that's gone too thick.
  • I like to toast my breadcrumbs separately so they stay crunchy instead of turning soggy in the sauce.
  • I add the nutmeg in small pinches and taste as I go since it can overpower the dish quickly.
  • I've found that fresh Parmesan melts smoother than the pre-shredded kind, so I grate it right before using it.
  • I keep the heat low once the cream goes in, since high heat can make the sauce look grainy or split.
