Easy Roasted Sweet Potato Recipe

I've made roasted sweet potatoes more times than I can count, and this is the version I keep coming back to. I wanted something quick enough for a weeknight but still crispy on the outside and soft in the middle every single time.
Prep Time 10 minutes
Cook Time 30 minutes
Servings: 4

Ingredients

  • 2 pounds sweet potatoes peeled and cut into ½-inch cubes – the star of the dish, choose firm ones with smooth skin for the best texture
  • 2 tablespoons olive oil – helps the cubes crisp up and carries the seasoning evenly
  • 1 tablespoon cornstarch – my secret for extra-crispy edges without deep frying
  • 1 teaspoon salt – brings out the natural sweetness of the potato
  • ½ teaspoon black pepper – adds a mild bite that balances the sweetness
  • ½ teaspoon garlic powder – gives a savory background note without overpowering
  • ½ teaspoon smoked paprika – optional but it adds warmth and a nice color
  • Fresh parsley chopped, for garnish – a pop of color and freshness at the end

Method

  1. I always start by preheating my oven to 425°F and lining a sheet pan with parchment paper. A hot oven from the very first minute is what gives the sweet potatoes that golden crust instead of a soggy, steamed texture.
  2. I peel the sweet potatoes and cut them into ½-inch cubes, trying to keep every piece roughly the same size. Uneven pieces cook unevenly, so a few extra seconds here really does pay off later.
  3. In a large bowl, I toss the cubes with olive oil first, then sprinkle the cornstarch over the top and toss again. The cornstarch coats the outside of each piece and is what makes the edges turn wonderfully crisp in the oven.
  4. Next, I add the salt, pepper, garlic powder, and smoked paprika right into the same bowl and toss until every cube is coated. I like tasting one raw piece at this stage just to check the seasoning balance.
  5. I pour the seasoned cubes onto my prepared sheet pan and spread them out so no pieces are touching or stacked. Overcrowding the pan traps steam, and steam is the enemy of crispy sweet potatoes.
  6. I roast the tray for 25-30 minutes, flipping the cubes with a spatula around the 15-minute mark. This flip is what gives you that even, deep golden color on all sides instead of just the top.
  7. Once they're fork-tender and caramelized at the edges, I pull the tray out and let the sweet potatoes rest for two to three minutes. This short rest lets the crust set so it doesn't go soft the moment you plate it.

Notes

  • I always pat my sweet potato cubes dry with a paper towel before tossing them in oil, since extra moisture is the number one reason they steam instead of roast.
  • I never skip preheating the sheet pan itself for a few minutes in the oven before adding the potatoes. It gives an instant sear the moment they hit the metal.
  • I use a dark, heavy sheet pan rather than a flimsy light one because it holds heat better and browns the cubes faster.
  • I keep my cubes on the smaller side, closer to ½ inch, whenever I'm short on time since smaller pieces roast and crisp up much faster than larger wedges.
  • I finish mine with a tiny drizzle of honey or maple syrup in the last five minutes if I want a slightly sweeter, caramelized side dish.
