Easy Summer Peach Watermelon Salad Recipe

I still remember the first time I made this Easy Summer Peach Watermelon Salad on a hot afternoon. I was craving something light, juicy, and naturally sweet without turning on the stove. This salad came together so quickly that it instantly became my go-to summer dish. Every bite feels like a mix of sunshine, hydration, and freshness in a bowl.
Total Time 15 minutes
Servings: 4

Ingredients

  • watermelon 4 cups, cubed
  • peaches 3 medium, sliced
  • cucumber 1 medium, thinly sliced
  • fresh mint leaves 1/4 cup, chopped
  • feta cheese 1/2 cup, crumbled
  • lime juice 2 tablespoons, freshly squeezed
  • honey 1 teaspoon, optional
  • olive oil 1 tablespoon, extra virgin

Method

  1. Start by washing all fruits thoroughly under cold water. Slice watermelon into bite-sized cubes and peaches into thin wedges. Keep everything evenly cut so each bite feels balanced and refreshing.
  2. Slice cucumber thinly for a crisp texture that blends well. Chill all ingredients for 10 minutes if you want an extra refreshing salad. Cold fruits make this dish even more enjoyable in hot weather.
  3. In a small bowl, whisk lime juice, olive oil, and honey together.mThis creates a light dressing that enhances natural fruit flavors. Make sure it’s well mixed so every bite gets balanced seasoning.
  4. Gently toss all fruits, cucumber, mint, and feta in a large bowl. Drizzle dressing over the top and mix carefully to avoid crushing. Serve immediately or chill briefly before serving for deeper flavor.

Notes

  • I always chill my fruits before mixing because it keeps the salad crisp and refreshing for longer.
  • I use ripe but firm peaches since overly soft ones break apart quickly.
  • I prefer fresh lime juice instead of bottled for a brighter flavor.
  • I add mint at the last moment so it stays vibrant and fresh.
  • I avoid over-mixing to keep the fruits visually appealing and intact.
