Easy Turkey Fried Rice Recipe

I made this turkey fried rice the morning after a big family dinner, and I was honestly shocked at how good it turned out. I had a container of leftover turkey and a bowl of cold rice staring at me from the fridge. Fifteen minutes later, I was eating a hot, savory skillet of rice that beat any takeout I could have ordered.
Total Time 15 minutes
Servings: 4

Ingredients

  • 1/2 tablespoon vegetable oil: A neutral oil handles high heat without burning or adding odd flavors.
  • 1/2 cup finely chopped onion about half an onion: Chop it small so it softens fast and blends into the rice.
  • 1 teaspoon minced garlic: Fresh garlic tastes far better than the jarred kind here.
  • 1 small jalapeño sliced (optional): It adds a gentle kick, so skip it for a mild dish.
  • 1 1/2 cups leftover cooked turkey shredded or cubed into 1/2-inch pieces: Small pieces heat evenly and stay juicy.
  • 2 eggs: They add richness and protein so scramble them until just set.
  • 3 cups cooked white rice: Day-old rice is drier so it fries instead of clumping.
  • 1 tablespoon soy sauce: It brings salty savory depth to every grain.
  • 1/2 tablespoon sesame oil: Add it with the seasonings for that nutty restaurant aroma.
  • 1 teaspoon vegetable stock powder: It boosts flavor without making the rice wet.
  • 1 teaspoon white pepper: It gives a warm earthy heat that black pepper alone can't match.
  • 1 teaspoon salt: Taste first since the soy sauce already adds some salt.
  • 1/2 teaspoon ground black pepper: Add a little more at the end if you like a bolder bite.
  • 1 cup frozen carrot and pea mix: Skip the thawing because they cook in two minutes.
  • 1/2 tablespoon finely chopped green onions: Stir them in last for a fresh mild bite.
  • 1 teaspoon white sesame seeds for garnish: A light sprinkle adds crunch and a pretty finish.

Method

  1. Chop the onion, mince the garlic, slice the jalapeño, and shred the turkey. Measure the sauces and seasonings and set them near the stove. Fried rice cooks so fast that you won't have time to hunt for ingredients halfway through.
  2. Heat the oil in a large wok or skillet over medium-high heat for about two minutes. Add the onion and garlic and cook for another two minutes, until fragrant. Toss in the jalapeño now if you are using it.
  3. Add the turkey and stir for about a minute to warm it through. Push it to one side of the pan and pour the eggs into the empty space. Scramble them gently until just cooked but still tender, then mix everything together.
  4. Add the cooked rice, then the soy sauce, sesame oil, stock powder, white pepper, salt, and black pepper. Stir for about two minutes so every grain gets coated. If the rice feels firm, add up to 1/4 cup of water to soften it.
  5. Add the frozen carrots and peas and stir-fry for about two minutes, until heated through. Stir in the green onions at the very end. Serve hot with sesame seeds sprinkled on top.

Notes

  • I always use cold, day-old rice. Fresh rice turns mushy, but chilled rice crisps up beautifully in the pan.
  • I prep every ingredient before I turn on the heat. Stir-frying moves too fast to chop on the fly.
  • I keep the heat at medium-high and stir constantly. That gives me even cooking and no soggy spots.
  • I use two spatulas to toss the rice. It feels like a restaurant trick, and it truly works.
  • I add water only when the rice is stiff. Up to a quarter cup is enough, and more makes it gummy.
  • I taste before adding extra salt. The soy sauce and stock powder already bring plenty.
  • I cut the turkey into small, even pieces. They warm quickly and never dry out.
  • I break up any rice clumps with my fingers before it goes in the pan. It saves me a lot of stirring
