Enchilada Style Ground Beef Burritos Recipe

I recently made these enchilada-style ground beef burritos, and let me tell you—they were a hit! The combination of seasoned beef, rich red sauce, and melted cheese wrapped in a soft tortilla was absolutely delicious.

Ingredients
  

  • Ground Beef 80/20 – Provides a balance of flavor and moisture, ensuring juicy burritos.
  • Taco Seasoning – A blend of chili powder cumin, onion powder, garlic powder, salt, and oregano for that classic Mexican flavor.
  • Better Than Beef Bouillon – Enhances the beefy taste making the filling more savory.
  • Dr. Pepper – Adds a subtle sweetness and depth to the beef mixture.
  • Water – Helps in cooking the beef evenly and creating a cohesive filling.
  • Butter – Forms the base of the sauce adding richness.
  • Flour – Thickens the sauce giving it a smooth consistency.
  • Beef Stock – Deepens the savory flavor profile.
  • Red Enchilada Sauce – Provides the signature tangy and spicy kick.
  • Beef Bouillon – Boosts the beef flavor in the sauce.
  • Chili Powder – Adds warmth and a bit of heat to the sauce.
  • Flour Tortillas Burrito Size – Large enough to hold the generous filling without tearing.
  • Mexican Cheese Blend – Melts beautifully binding the flavors together.

Method
 

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning, Better Than Beef Bouillon, Dr. Pepper, and water. Simmer until the mixture thickens and becomes flavorful.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for a minute. Gradually add beef stock, red enchilada sauce, beef bouillon, and chili powder. Simmer until the sauce thickens.
  3. Preheat your oven to 375°F (190°C). Place a tortilla on a flat surface. Spoon the beef mixture onto the center, sprinkle with cheese, and roll up the tortilla, folding in the sides as you go.
  4. Place the assembled burritos seam-side down in a baking dish. Pour the enchilada sauce over the burritos, ensuring they are well-coated. Sprinkle additional cheese on top. Bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.

Notes

  • For extra flavor, sauté chopped onions and garlic with the ground beef.
  • Use freshly shredded cheese for better meltability.
  • Allow the burritos to rest for a few minutes after baking to set the filling.
  • Garnish with fresh cilantro, sour cream, or diced tomatoes for added freshness.
  • Serve with a side of Mexican rice or refried beans for a complete meal.
